Chuck's Favorite Mac and Cheese

Just OK. Decent flavor but completely dry. I was supposed to have company over the night I made this - there was a storm and they didn't come over - I a thankful because I would have not wanted to serve this to them. I won't be making it again.

Slow Cooker Beef Stew III

Excellent! We just cooked it overnight -then refrigerated during the next day and reheated on the stove after work (we don't like to leave the slow cooker on when we aren't home). It still turned out great!

Traditional Mashed Potatoes

Excellent. Before this recipe I always just threw in some milk and butter and hoped for the best - but now I will always use this recipe. I used a Potato Ricer the "mash" the potatoes. If you haven't tried a potato ricer yet I highly recommend it - they will be the fluffiest mashed potatoes you ever had!

Sauteed Green Beans

This was okay - the dish looks beautiful but didn't have a ton of flavor. I reheated it the next day and it actually tasted better the next day! I might try to make it again and use more bacon to get more flavor.

Buffalo Chicken Dip

This is wonderful! You can make it as spicy as you like by adjusting the Franks Hot Sauce. I brought it to a work potluck and the guys were just raving about it!

Very good - but like another reviewer said - use 8 oz sour cream,8 oz cream cheese and drain the tomatoes for a less watery more creamy dip!

Baked Pesto Chicken

Excellent! My husband could NOT stop raving about this! We pounded the chicken breast thin (about !/2") before cooking. I also adding a little shredded parmesean cheese to the mozzarella. Delish!

Roasted Red Pepper Soup

Flavorful & Fabulous! I loved this. I made it pretty much to the recipe except that my grocery store only had ONE 24 oz jar left! To make up for what I was missing I took three fresh red peppers and broiled them until the skins bubbled - then removed the skins and pureed them up. I can't say enough about the flavor of this soup - although next time I might try it without the mushrooms. I don't think the mushrooms brought too much to the party and I think it would be prettier without them.

OK - I did a total shortcut on this recipe! It was still wonderful. Instead of making the dressing I used store bought - Kraft Creamy Poppyseed. It was awesome!

This was just OK. My husband liked it. If I make it again, I will use less Thyme and add more Garlic Powder. I would also use spicy sausage to add some spice!
