Bacon and Tomato Cups
I thought this recipe was great but I did make a couple changes. Instead of bacon I used turkey pepperoni and instead of swiss I used fat free mozzarella cheese. I was going for more a "pizza cup" flavor I guess. I also didn't have any dried basil so I used italian seasoning and garlic powder...again, going for the pizza taste. I used a little less mayo (I think, I eyeballed it). When I split the biscuits I rolled them out flat so the fit in my cupcake trays better. I cooked them at 350 for 15min and they came out great! OH, I also didn't use onion because my boyfriend doesn't like onions haha. Basically I liked the general concept of the recipe. I would have made it with the ingredients it calls for because I like all that stuff too...so maybe I'll do that next time.

Cuban Smoked Sausage with Chickpeas
I made this last night and it came out great! I cut out a few things because I didn't have them at home. I made it without the wine, onion, and adobo seasoning. I added a little bit of hot sauce to give it a kick. Came out great! I served it over whole wheat pasta for dinner. Next time I willl seve over rice......but we just happened to not have any rice this time! Great recipe, will be making again!

Portobello Mushroom Stroganoff
I made this dish a couple weeks ago and I was not really impressed. It didn't have much flavor. I'm a huge mushroom lover so I was really excited to try this but ultimately I was left disappointed. I just read some other reviews with different revisions. Those might help, but as is it’s kind of boring.
