Parmesan Spinach Balls

I added 2 more green onions and 4-5 cloves of garlic. I also added cayenne pepper and a dash or two of nutmeg. I only used 1 1/2 cuos of bread crumbs (italian) as other readers suggested. The family loved it. Great recipe.

Zucchini Tomato Casserole

Very good I sauteed 1 onion with the zucchini. I did not drain zucchini and onion before adding it to the other ingredients. I also added French Fried Onions to the top. My family loved it. I will make for a potluck. Great recipe.

Vegetarian Ribs

Very good for the first time making it. My family was not impressed at first with the big blob. I added liquid smoke, onion powder, and garlic powder. Once it had baked they all thought it was very tasty, meat eaters and vegetarians alike. The only one who did not like it was my youngest son because he hates peanut butter and he saw me coat it in peanut butter (you can't taste the peanut butter). Next time I will make it and tell him I did not use peanut butter. I plan to still tweak the recipe maybe less water since I had a blob instead of a ball.

Vegetarian Stuffed Poblano Peppers

Quick, easy and delicious recipe. I sauteed a chopped onion with the vegetarian crumbles and I used taco seasoning and Hot Chili Powder to season it. I did some with cheese and some without cheese. My family topped them with salsa. Thanks for the great recipe.

Roasted Vegetables and Puff Pastry

Great recipe but I changed a few things. I added at least 6 cloves of garlic. I used one serrano pepper. I let the veggies roast about 25 minutes. I seasoned them with black pepper and garlic salt. I used a can of diced tomatoes, onion and bell pepper. I mixed the tomato mixture with a can of diced tomatoes, Morning Star Veggie Chicken strips diced up, and a can of cream of mushroom. I poured that on top the roasted veggies then added the feta and some shredded cheddar. Then the puff pastry. I baked it about 30 minutes. The kids loved it. It was called the stuff that taste like pizza and the stuff that is like chicken pot pie. It was a hit with the non-vegetarians. Will make again with my modifications.

Butter Bean Burgers

I made this last night and it was a hit with the kids. I had a fluke with one can of butter beans I opened the can and there was only 3 butter beans in the can. So I used one can of butter beans and a can of garbanzo (chick peas) beans. I used bread crumb and egg replacer. I used seasoned flour on the outside next time I will use cornmeal but I did not have any. I will also increase the jalapeno peppers. I made half with cheese and half without cheese. My youngest put BBQ sauce on his. My oldest ate his with ketchup and I put ketchup on mine and also honey. I love the flavor honey adds to it. ADDITIONAL COMMENTS 7/17/09 I have really added a twist to this recipe I dust mine with Fish Fry Mix with lemon and then fry. I stopped dusting with seasoned flour. I then serve on top a bed of garlic pasta and add a sauce such as Mango Ginger and Habanero on top the burger. Also if I do not have butter beans, garbanzo beans (chick peas) work great. My family really loves this recipe.

Chocolate Earthquake Cake I

Very good cake. My mother makes the same cake but it has different name "Chocolate Delight Slap Your Momma Cake" her friend in Florida gave her the recipe. The cooking time was accurate any longer and the cake would have burned. The kids loved it.

Vegetarian Tortilla Soup

Very Excellent Recipe it is a keeper. I love spicy food so I added a can of diced tomatoes with habaneros in addition to the crushed tomatoes. I also added another can of corn (drained) and Morning Star Veggie Chicken Strips. The kids loved it. I topped mine with cilantro and lime in addition to the other ingredients.
