Slow Cooker Texas Pulled Pork

I sprinkled my 2.5-lb. pork sirloin roast with salt, pepper and chipotle powder about an hour before cooking. I didn't have broth so I used scotch ale instead. After shredding, I turned it back on high and took off the lid and it thickened up nicely. I also loved the toasted bun idea. Overall, delicious!

Oven Fresh Seasoned Potato Wedges

Used four small red potatoes, rinsed the cut wedges and patted them dry before seasoning. Placed them on the baking sheet skin down and they cooked perfectly.

Slow-Cooker Pepper Steak

The meat was delicious and literally fell apart. The picture showed red bell peppers so I used one red and one green. The tomatoes seemed a little out of place. I'd make it again but use more peppers and skip the tomatoes. As other reviewers mentioned, I might add the peppers later. I like soft peppers but not quite that soft.

Roast Leg of Lamb with Rosemary

Slow Cooker Chicken and Dumplings

I'd give this 4 stars except I made a few modifications to get there. I followed others' recommendations and used chicken broth instead of water. I also added about 1 tsp of Italian seasoning and about 1/2 tsp each of black pepper and garlic powder. My chicken breasts were huge so I only used three. I used Grands biscuits, broke each biscuit into 6 - 8 pieces and only needed one can. They took over an hour to cook on high. All that said, it was easy and tasty comfort food and I'd make it again.

Quick Brussels and Bacon

I'd never had brussel sprouts in my life, and this seemed like a good way to start. I followed many of the comments: steamed fresh brussel sprouts for about five minutes, then let them cool and cut them in half. I cooked the bacon, then sauteed fresh garlic and shallots in the bacon grease. They burned almost immediately, so I threw them out and started over in the remaining grease before adding the brussel sprouts and bacon back in. I cooked them longer than 7 - 10 minutes, though. I'll try it again, but I think I'll cook them a bit longer at a lower temperature, so I get more of the bacon flavor.

Company Potatoes

I used fat free sour cream and reduced fat cheese. I felt like there was too much sour cream, and maybe not enough of the spices. This has potential to be amazing, but I'll try tweaking it a bit next time.

Harvest Salad

Great recipe that's easy to customize for personal tastes. I've made this several times now, and it feels fancy but it's easy to make. My only word of caution is that the walnut oil is fairly expensive. Good thing you only need a little bit each time.

Kielbasa Fried Rice

I wouldn't call this an exceptional dish, but it is an easy, tasty way to use up leftover white rice from Chinese takeout. And, since leftover white rice means I've had Chinese food recently, I appreciate that the kielbasa changes the flavor profile a bit.

Best Italian Sausage Soup

I made this for the first time and I'm eating it right now: delicious! I used hot Italian turkey sausage, uncased, and shiraz for the wine. I also took one reviewer's suggestion and sprinkled with a little mozzarella before serving. My only complaint: the directions didn't say anything about cutting the tomatoes, so I have a about 10 whole tomatoes floating in the finished soup, which was a little weird. I also should have cut the pasta -- it's a bit difficult to eat full linguini strands with a spoon.

I should have read other reviews before making -- I followed the recipe exactly and after a few hours, had to add extra water. It still ended up a little bit dry. I'd make this again, but with a number of modifications to increase liquid and a little bit of flavor.

Bourbon-Mango Pulled Pork

The BBQ sauce (Sweet Baby Ray's honey chipotle) completely overwhelmed the other flavors. It was good, but I'm not sure it would have tasted any different had we skipped the mango, chipotle powder, etc. and just soaked pork in BBQ sauce.

Thai Pineapple Chicken Curry

I substituted lite coconut milk for regular, and used instant jasmine rice instead of making my own, but otherwise followed the recipe exactly. Smelled and tasted delicious. I will be making this one again, although I may add a bit more curry to increase the spice level, and experiment adding different vegetables.

Scrumptious Salisbury Steak in Mushroom Gravy

I used onion powder instead of the finely chopped onion, but otherwise followed the recipe. I'd use real onion next time, as the recipe states, and maybe add a bit more seasoning, but generally very good. Makes a lot of nice, thick gravy.

I followed the recipe exactly, just rubbed the inside of the crock pot with a little bit of butter. It turned out perfectly! Fell off the bone -- barely needed a knife! I will make this again for sure!

Roasted Garlic Sweet Potatoes

Great idea, way too much garlic. I cut the recipe in half: two sweet potatoes and one head of garlic. I honestly could barely taste the potatoes through the overwhelming garlic. I'll try this one again but I'll use three or four sweet potatoes per head of garlic.

Honey Ribs

Pros: Ribs were tender. Cons: Ribs had surprisingly little flavor after soaking in a watery broth for six hours. We don't care for honey mustard, so we replaced it with chipotle Tabasco sauce for an extra kick. Cooked in a crock pot on high for about four hours, then switched to low for another two hours. The meat was falling off the ribs, but we had to cover it in BBQ sauce to give it any flavor.

Chipotle Mayo

The chipotle was completely overpowering for me, in terms of spice and just a dominating flavor. I kept adding more and more mayo to the mix, hoping to dilute the chipotle to a tolerable level, until I used the entire jar. I put the resulting mix on one sandwich before throwing the whole thing out.
