Cheesy Potatoes II

Yes yes yes! I use cream of celery instead of the chicken and I serve it with lots of green onions and chopped tomatoes. Super easy, and super delicious!

Bell Pepper Frittata

I added cooked sausage and followed another reviews advice by propping up bell pepper halves with tin foil. This was a hit with the family--and so much better than regular boring stuffed pepper recipes.

Easy Four Cheese Lasagna

How could this be any less than 5 stars? Such a basic dish, but sooo cheesy and delicious. I didn't mix the cottage cheese into the sauce--I put it between the layers. Yum!

Corn Pudding Stuffed Tomatoes

I did not care for the texture of the baked tomatoes. Corn filling was great! I would HIGHLY recommend only using fresh, home grown (or farmers market) tomatoes. Skip the hot-house ones from the grocery store!

Hashbrown Breakfast Bake

Yum! I used red and green bell, cubed hasbrowns, and sausage. I added an extra two eggs because 5 didn't seem like enough. We all loved it! I just remembered--I forgot to put out the salsa with it. :)

Pasta Lasagna

I wouldn't say this is mind blowing, but I would say that it's a keeper. Very similar to lasagna, without all the work. I used a full 12 ox box of penne and just added some additional sauce until I thought it was wet enough. I also mixed the sauce into the pasta and layered with the ricotta. As for spreading it, I found that it was easier to use a spoon and "snap" it down. Slightly lumpy, but oh so easy!

Jalapeno Cream Cheese Chicken Enchiladas

I was intrigued by this recipes--who doesn't love cream cheese? I adjusted the recipe slightly: I omitted jalapenos and added some black beans, and sauteed mushrooms and onions. I ended up adding more of the spices and a little of the green sauce to the mixture because it was a little bland. Overall, a good recipes. The cream cheese is very good with the green sauce. If the hubby weren't afraid of jalapenos I would have added those (I will next time anyway). With persona tweaking, this is a great recipe.

Wow! Very rich. I made the recipe exactly as stated, but the dish sat for a few hours until serving time. They lost the crispy top :( But, they were still pretty good. Next time I will bake closer to serving time.

Pupusas de Queso (Cheese-Stuffed Tortillas)

Not enough water. I followed another reviewers advice and added water until the dough reached a cookie dough consistency. That ratio was 2:2, and the pupusas were far easier to make. My second time around I gave up the two disc method and just did the ball up and reflatten method.

Rempel Family Meatloaf

Holy Moly! Tasty, moist, and flavorful! I used 2 lbs of meat and added 1/2 a bell pepper and onion and some chopped garlic. I also found Paula Deans glaze and used that too. Fantastic!!!
