About this Cook
I cook 7 days a week for my family. I'm a busy, homeschooling mom of a beautiful daughter. I love God, I am a Christian, and I love my church. I am an artist, specializing in polymer clay sculpture, cartooning, and caricaturing, and I sell my work online at and My husband is also an artist and cartoonist. I am blessed to have a Boston Terrier named Stella and two beautiful cats, Archie and Jeej. Our family has a lot of fun together, and we love comedy, cartoons, laughing, being silly, and just relaxing and spending family time together. I'm pretty laid back, live out in the country, love wildlife & birdwatching, and am learning to enjoy life despite its imperfections.
My favorite things to cook
I'm half Sicilian, so I love pasta. I use my mother's recipe for sauce, which is the best sauce in the world. I also love to cook Mexican dishes, such as burritos, enchiladas, Spanish rice, homemade salsa and guacamole, and chili. Also, I make some great Southern Pork BBQ. I'm all about comfort food. And I love trying new things.

Good Old Fashioned Pancakes
Made these this morning, and we really liked them. They are thick and fluffy but not dry at all. And the batter is super thick, as well. I used only 1/2 tsp of vanilla as I don't like it to be overpowering in pancakes. I also used unsalted butter in the recipe and to grease the griddle, and I didn't find them to be too salty at all as other reviews have stated. I would have given 5-stars, however, the recipe only made 8 pancakes, and that was using every bit of the batter scraped from the bottom of the bowl.

Chris' Bay Area Burger
Very flavorful and delicious with the garlic and basil, and the olive oil kept the burgers very moist... HOWEVER, the oil made the grill flame up big time, and also the burgers were entirely too salty and greasy. I will make these again but next time, I'll cut the salt down to 1/2 tsp and the olive oil down to 1 T.

Cuban Black Beans II
My husband liked them, but my daughter and I did not. To me they're rather bland, and just tasted like a bland, meatless chili. I don't really know what the point of the pimentos is, as you can't taste them at all. And one teaspoon of sugar was not enough, as the tomato paste left them pretty sour.
