One Bowl Chocolate Cake III

Substituted 9 ounces melted chocolate (57% cocoa) for the cocoa, reduced sugar to 1.5 cups, and made into cupcakes. Scrumptious.

Buttermilk Pancakes II

Super Easy Doughnuts

We liked these. The dough was a little sticky, but we just turned the dough out on to a flour-dusted surface, and kneaded in a little more flour to make a soft dough. I think too much flour might have made the final product dry; the soft dough was perfect. We fried in batches, and it only took a few minutes per batch. My 6 year old made the dough, and my 14 year old fried them up.

Victory Brownies

A little fudgy, I prefer chewy but not fudge in a brownie. The taste was lovely. I have been trying a lot of chocolate variations. The chili pepper and chocolate is not only traditional (think Mayan, but also very tasty.

Banana Banana Bread

I finaly made this recipe after looking at it for years. It is a good base recipe to which you can add ingredients to make it your own. I added a mixture of cinnamon, coconut, granola, and walnuts that I chopped in the food proccessor to a large crumb.

Thick-Style Lebanese Garlic Sauce

Birthday Bones

These keep well. I have been testing to see how long they will last (I am planning on giving them to doggie friends during the holidays), and so far they are still good at three weeks - crunchy, no signs of mold, and the dog is still eating these. I did leave them in the oven a little longer than stated in the recipe. My dog is a chewer, and I thought she might like the resistence of a harder cookie.

Baked Apples in Butter Brandy Sauce

Choco-coconut Bars

This is incredible - these taste amazingly like a mounds bar. I scaled this down to 4 servings, and it made 15 good size pieces. Very easy to make. I did make one change: instead of pressing into a pan and cutting the chilled slab into bars, I rolled the coconut mixture into a log, and then cut into pieces. When dipping, I turned the bar over to coat completely, and this made a beautiful swirl over the top of each candy. Note: I did use my hands to mix in the coconut. I amy have used a bit more confectioners' sugar than called for. The mixture was very stiff, and this may have made it easier to dip the pieces in chocolate.

Ferg's Ulster Fry-up

This has something for every one. I had a modified breakfast of eggs, farl and tomato, and skipped the meat. I was well satisfied, and really did not need to eat again until dinner. Farls are new to me, and I loved both types.

Moroccan Lentil Soup

Excellent family fair -- the 10 year old and the two year old both devoured this soup. We did not find it bland, but I did buy my spices today (cheaper and fresher to buy the amont I need from the spice store).
