Sweet Hot Mustard Chicken Thighs

We loved this chicken, although I confess I used bone-in breasts with skin instead of the thighs. The breasts stayed nice and juicy and the meat was extremely flavorful in spite of the fact I forgot to add the garlic to the marinade (and added garlic powder on the meat instead) and also forgot the onions! What a forgetful day it was! But dinner was yum in spite of it! I marinaded the meat for 5 hours and roasted some chunked Yukon golds with a bit of olive oil and herbs off to the side of the meat, in the same pan. It was all done at the same time...perfect! Thanks for a great recipe!

Baked Teriyaki Chicken

This was truly wonderful! I did add half a teaspoon of cayenne pepper to give it a bit of a kick, as we like our teriyaki spicy. I followed the advice of another member who just poured all the sauce over the chicken, but next time I will baste it because once the water and fat came out of the chicken, the sauce was watery (though still tasty). Very, very nice! Will definitely make this often.

Simply Parmesan Chicken

Yummy and very tasty--hubby gave it two thumbs up! However, I did add some salt to the cheese and crumb mix and I had to both increase the oven temp to 375F and the cooking time to 45 min. I used large chicken breasts so maybe that was it. I'll definitely make this again and again! Impressive looking enough for guests, too!

Slow-Cooker Pepper Steak

Very easy and tasty! I made it without the added teaspoon of salt and was glad I did as it would've been too salty otherwise. As suggested by another reviewer I added the peppers during the last hour of cooking to avoid over softening and they were just right. Hubby was very happy and asked if there was going to be enough for leftovers...high praise from him. Will be making this again.

Turkey Carcass Soup

This recipe is a great way to use up the leftover turkey and is really tasty. The only changes I made were reducing the Worcestershire to one teaspoon and I used rice instead of barley. I had family over for dinner and it almost all was eaten at one go. Everyone loved it. My refrigerator has lots of space again now that the turkey is out of there.

Salsa Chicken

This was just okay. Made it exactly as written, and the chicken was nice and moist. I think the success of this recipe really depends on how good the salsa is, and mine was just okay. With homemade salsa, I think this could be four stars.

Baked Garlic Parmesan Chicken

This recipe was good, but it took about 45 min in my oven at 350F to reach an internal temp of 165. Also, she instructs to top the chicken with any remaining crumbs, but this resulted in a lot of dry crumbs in our mouths. Since there is no egg to create a coating, the extra crumbs don't really combine into the crust. Only the crumbs closest to the oil coating stick. So I won't be adding the additional crumbs on top next time. Otherwise, a tasty and very moist baked chicken recipe overall. Next time I'll add some oregano and salt for additional flavor and some dried parsley for additional color. My husband liked it enough as is for a thumbs up. Thanks, Karen!

Braised Balsamic Chicken

I made this for dinner tonight and both hubby and I really enjoyed it. The flavors blended beautifully, and the chicken stayed moist. I served it over hot couscous with a green salad and we both felt spoiled. The only change I made was to use onion powder instead of fresh onion, because I was out. The fact that it was still so good in spite of the missing fresh onions tells you what a great dish this is. I did mix the tomatoes together with the herbs and balsamic vinegar in a bowl (as a reviewer suggested) before adding to the skillet--I think this is an easy way to make sure all the herbs get distributed evenly. I bought a good quality aged balsamic recently and I think it truly makes a difference since the vinegar is such an integral part of the dish. Will make this often. Basil Chicken over Angel Hair

I made this recipe according to the instructions and it was very nice! I can't imagine using dried basil for this recipe or canned tomatoes, as it would really take away from the beauty of this dish-it's freshness. I did have a little trouble mixing everything evenly into the angelhair. Next time I will probably use bowties or just put the chicken mixture on top of the angelhair. I served it with good crusty olive bread and hubby was enthusiastic. Will definitely make it again.

Pumpkin Chocolate Chip Muffins

Good muffins, overall. Made them exactly as called for except mini chips instead of regular. They looked beautiful and were done all the way through at 23 minutes. Hubby loved them, but I thought they needed more spice. Will try doubling the nutmeg and cinnamon next time. Also interested to try the applesauce version.

Pork Chops Italiano

This recipe was so flavorful, but the chops dried out in spite of the initial browning. When I make them next time I will get very thick chops and leave them a bit frozen and see if that helps. Otherwise, a truly good dish that my husband and I both really liked.

Italian Vegetable Soup

This was a wonderful soup! The only things I changed were browning the meat with the onions in a T of olive oil, using beef soup base instead of the bouillon granules, adding four cups water and leaving out the corn. Oh, and I adjusted the spices since I added more water. This soup is flavorful even without simmering all day! Unlike others I left the cabbage in since we love it!
