Mexican Baked Fish

This was excellent. My boyfriend DEVOURED this. I used catfish instead as I think cod fish is very "fishy". My only concern with this meal was that it was kind of watery in the dish while cooking. My salsa was really chunky so I think that it was the fact that I did not pat the filets dry enough before putting them in the oven. Also, I get antsy about fish being cooked completely & by putting all of the ingredients on top of it immediately, it was hard for me to tell. Next time, I will cook the fish for 10 minutes just to be sure & then add the salsa, cheese & tortilla chips. Great recipe! Thanks for posting it.

Baked Ham

I was really disappointed with the way this ham turned out. Like another reviewer, the coke just sat at the bottom of the bag & since the recipe directed me to poke holes in the bag, there was no way to turn the ham over to ensure full coverage basting. I obviously did something wrong as other reviewers found this recipe superb. I am not sure where my error came in. I used a roasting bag & followed the directions to the T. It also might have been helpful for the poster of the recipe to mention what TYPE of ham to use. I am a novice cook (just trying to get some good meals together for myself & my boyfriend) & picked up a canned ham not a cut of shoulder, etc. YUCK! I was EMBARASSED to serve this. We ended up chucking it & having sandwiches for dinner. Anyway, regardless of the ham, the recipe did not work for me at all.

Seared Scallops with Tropical Salsa

This recipe looks very inviting & tastes great. I only had 2 issues with it. The first: the cilantro seemed to overpower the salsa. Keep in mind that I am not a cilantro fan but I still think that the hot peppers would have been sufficient. The second, sea scallops tend to be pretty thick & the cooking method overcooked the outside while not cooking the inside well enough for me. Next time, I will skip the cilantro alltogether & bake the scallops for a few minutes before pan frying the outside. All in all, a good recipe.

Baked Mango-Ginger Swordfish

This recipe was ok. I felt that it was a bit too "vinegary" tasting though. Although, vinegar was not called for in the recipe, the sherry and ginger together make for a pH extreme. Also, mango chutney's vary greatly depending on the brand & this ingredient was the most prominent as per volume in the sauce. Perhaps it would have been better if I had used the same brand as the recipe's author?

Baked Scallops

These scallops were fast & restaurant presentation worthy. I will admit that I was hesitant to try cooking any kind of fish (it seems so delicate) but this recipe made it easy. Note to those novice chefs: MAKE SURE that you dice up your garlic well. I apparently did not make the pieces as small as they could have been & got more than I bargained for on a few bites.

Asian Beef Skewers

YUMOLA! Making the marinade is a little work but it is definitely worth it. I bought a sirloin steak tip cut that was thick & the results were perfect! I also let the meat marinate about 10 hours. DELICIOUS!

The coating on this chicken is fabulous! It can tast a little salty or overwhelming on a filet, however. I now use it on chicken breasts as they are thicker.

Baked Pork Chops I

These are terrific! Nice and juicy. A little work since you have to fry the chops & then bake them but it's worth it. I did not bake the chops for as long as the recipe directed, however.

Connie's Zucchini "Crab" Cakes

Mine were pretty "watery". They fried up nicely but tasted more bland than I had expected. They were good but they sure didn't taste like crab cakes to me.

Bacon Chicken I

This recipe is quick, simple & very yummy. The only change that I made to the dish was to take it out of the sauce & broil it for the last 10 minutes (about 5 minutes on each side) to crisp up the bacon. I noticed toward the end that the bacon was indeed cooking but was pretty soggy. I am all set with soggy bacon. The dish is great!
