Crab Canapes

I didn't have curry, so I skipped it. Wasn't sure what kind of dinner rolls to buy so I got crescents. It was delicious! This is absolutely a hit. If you are trying this recipe for the first time, you are safe serving to company because it is easy and tastes great even when you alter it, as I did.

Stuffed Green Peppers I

I have made these twice now and both times, everyone loved them. THE ONLY change I made was to use 1 1/2 cans of tomato soup, tho one can would've been plenty, as they were quite juicy and there was quite a bit of sauce in the pan. The are excellent re-heated, too!

My Chili

Wow man this stuff was surprisingly DELICIOUS. Even my 7 yr old ate it. I was hesitant about the organo because I am not a big oregano fan. However, we couldn't even really taste it. This chili was very tangy---perhaps because of the large amount of onion in it? The only change I made was to use ground turkery. Absolutely will make again.

Green Salad with Cranberry Vinaigrette

Every adult at our Christmas dinner raved about this salad. What can I say? Delicious! I used dried cranberries but next time am going to try it with fresh. You might particularly appreciate the pretty pink dressing.

Twice Baked Cheesy Potatoes

Wow! Eveyone loved these. I made these the day before and, in my opinion, twice-baked potatoes are best made the day before. They sort of "set" and are less "mushy". The only change I made was to sprinkle a little paprika on top. The russet color looked pretty on the gold-colored potatoes.

Delicious Ham and Potato Soup

Whole family loved this. Only changes I made was to use turkey ham and a little less salt. I would recommend NOT using bacon or adding scallions. The flavor of this soup is so delicious as is, why change it to something else.

Amy's Delicious Turkey Burgers

These turned out beautifully. People said "Wow." when I set the platter on the table. They are nice, thick-looking burgers that kind of taste like meatloaf. The only change I made was to add less red pepper flakes. Served them on whole wheat buns with lettuce and tomato.

Spinach and Potato Frittata

We are absolutely making this again. Even my husband who is not thrilled about green onion or spinach said it was excellent. It's quick to make, too. Next time, I may try egg beaters because I think with all the other flavors it will work well.

Lasagna Roll Ups

I didn't think these were too much work---rolling them up is not too difficult and they looked really nice nestled up in the pan. I did alter this recipe in that I made it without the spinach or tofu. Even in this more plain fashion, they were quite tasty, looked very nice in the pan. I am thinking about making them as a "side dish" of sorts to a party or family gathering, just for something different.

Neat Sloppy Joes

Okay, this is now the recipe my family uses for sloppy joes. In my opinion, they are the best sloppy joes I have ever had. I have had several people ask for the recipe. These sloppy's somehow remind us of the good old-fashioned sloppy joes we have at church functions, down in the basement accompanied by pans of various baked goods made by the ladies.

Baked Corn II

Made this for Christmas for extended family gathering. This was the first dish gone. You could hear people commenting on how good it was. You could hear "Mmmm's". Even my picky father pronounced that it was good.

Nancy's Chicken in Puff Pastry

Impressive dish to make for company. It was a rich dish. I am thinking next time I make it I will add a little less cream cheese. Don't make the mistake of cooking it with a cover on, as my husband did because that pan turned out a little pale and soggy. The ones without the lid looked nice.

Garlic Shrimp Linguine

Husband and six-year-old are asking for this one again. This recipe is simply good--not over the top with a lot of sauce or strong flavors. Very good and I would not hesitate to make this for company.

Roasted Potatoes with Tomatoes, Basil, and Garlic

Everyone loved this. Great flavor with the basil and tomatoes. I did wait until last ten minutes to mix in the basil. Made the mistake of waiting to throw the rosemary in then, too. That should probably go in right in the beginning. Also, I quartered the red potatoes and cooked it at 400 degrees for 35 minutes and they were perfect.

Chinese Chicken Salad III

Fast and Friendly Meatballs

Have made these several times. They are really good. I do use ground turkey and last time I made them, threw in quite a bit of fresh chopped parsley, just 'cause I had it to use up. They were wonderful. I mean, when there were only two meatballs left the next day, there was a discussion around the table about cutting them into halves so everyone could get half of a meatball. That should tell you how tasty they are. One word of caution: don't overcook meatballs. Pull them out of the oven when they are 'just done'. That way, they are nice and tender.

Ranch Dipping Sauce

No one can tell this is low fat. This is my standard ranch sauce now. The fresh parsley is a must in order to pull it off. It adds so much.
