Spinach and Potato Frittata

We are absolutely making this again. Even my husband who is not thrilled about green onion or spinach said it was excellent. It's quick to make, too. Next time, I may try egg beaters because I think with all the other flavors it will work well.

Szechwan Shrimp

I made this with brocoli. Everyone like it. Got to be careful not to cook the shrimp too long when heating it up---mine got a little rubbery.

Neat Sloppy Joes

Okay, this is now the recipe my family uses for sloppy joes. In my opinion, they are the best sloppy joes I have ever had. I have had several people ask for the recipe. These sloppy's somehow remind us of the good old-fashioned sloppy joes we have at church functions, down in the basement accompanied by pans of various baked goods made by the ladies.

Ranch Dipping Sauce

No one can tell this is low fat. This is my standard ranch sauce now. The fresh parsley is a must in order to pull it off. It adds so much.

Baked Corn II

Made this for Christmas for extended family gathering. This was the first dish gone. You could hear people commenting on how good it was. You could hear "Mmmm's". Even my picky father pronounced that it was good.

Nancy's Chicken in Puff Pastry

Impressive dish to make for company. It was a rich dish. I am thinking next time I make it I will add a little less cream cheese. Don't make the mistake of cooking it with a cover on, as my husband did because that pan turned out a little pale and soggy. The ones without the lid looked nice.

Daddy's Sloppy Soup

The flavor was very good with this soup. Had a little problem with the way it looked as in the cauliflower in the red broth. This was a little bit of a turn off to us. However, if that doesn't bother you, it has a nice flavor and it is different from the run of the mill soup.

Garlic Shrimp Linguine

Husband and six-year-old are asking for this one again. This recipe is simply good--not over the top with a lot of sauce or strong flavors. Very good and I would not hesitate to make this for company.

Chicken Teriyaki with Asparagus

Oh my! Do not hesitate to make this one. I made this exactly as stated and it was absolutely delicious. Served it to five other adults. There was not a scrap left. This is a keeper for how delicious, appealing to the masses, and easy to make. Plus it's a little fancy looking.

Roasted Potatoes with Tomatoes, Basil, and Garlic

Everyone loved this. Great flavor with the basil and tomatoes. I did wait until last ten minutes to mix in the basil. Made the mistake of waiting to throw the rosemary in then, too. That should probably go in right in the beginning. Also, I quartered the red potatoes and cooked it at 400 degrees for 35 minutes and they were perfect.

Mary's Healthier Potatoes

I didn't want to rate this recipe, just comment, but it is forcing me to rate it. I think the problems I had were my own fault and not because the recipe is bad. I had difficulty with boiling and shredding the potatoes. Mine were probably a bit overcooked and tasted kind of like paste. This was problem #1. I think knowing just how long to boil, how much to soak up the liquid with paper towels, etc. is really important and maybe comes with experience. I then realized I didn't have cottage cheese, so I used cream of mushroom soup and some parmesan (which is kind of not good together). I mean, it was edible the first night but I tossed it out the next day.

Berry-Filled Lemon Cake

This cake doesn't raise very high and mine turned out fairly dry, though perhaps it was a little overcooked. The flavor was quite nice though and it looked beautiful.

Chicken and Red Bean Enchiladas

These were good. Everyone said they liked them. I would recommend using something other than kidney beans just for the way it looks. I did find it a bit more labor intensive than it first appeared.
