Two Ingredient Pumpkin Cake

Wow man this was delicious! I drizzled some cream cheese frosting on it. Everyone was eating it and saying how "moist", how "delicious". Definately a keeper!

Meatball Sandwich

Everyone from age 8-82 in my family loved this. My 8 year old previously didn't like meatballs but now he's a believer! I don't know what more you would want out of meatballs. The only change I made was to use ground turkey and people said you could not tell it was turkey. We ate this on Italian bread (both white and wheat Italian) with provolone cheese.

Turkey Noodle Soup

Slow-Cooker Chicken Tortilla Soup

Everyone liked this--old and young alike. I used Hot enchilada sauce and people generally thought it was just right in terms of heat---even people who don't like spicy food. Really tasted, stayed good in the fridge for several days and still tasted great when warmed up. Will make again.

Chicken Pot Pie III

Everyone absolutely loved this. My husband said it tasted even better the next day. I made two pies and used 1 1/2 teaspoons thyme and even with this, it had quite a strong flavor of thyme. Next time, I will add just a tad less. I also used a rotisserie chicken and deboned it for the meat because that seems easier.

Layered Spinach Salad

I have made this 3 times now and each time, everyone loves it. I make it exactly as stated in the recipe. Be sure to use a glass bowl so you can see the pretty, colorful layers and serve very cold.

Soy and Garlic Marinated Chicken

I marinated this for 24 hours then grilled them. Took the advice of another reviewer and added a sloice of muenster cheese to each chicken breast. These were great! When you marinade them this long, the chicken gets quite brown in color, which was interesting.

Nanna's Banana Bread

Very good, except I overcooked a bit and that is a no-no with banana bread. I think adding more cinnamon might be a good idea because I thought it was a little hard to notice. Otherwise, very nice recipe.

Lasagna Roll Ups

I didn't think these were too much work---rolling them up is not too difficult and they looked really nice nestled up in the pan. I did alter this recipe in that I made it without the spinach or tofu. Even in this more plain fashion, they were quite tasty, looked very nice in the pan. I am thinking about making them as a "side dish" of sorts to a party or family gathering, just for something different.

Stuffed Green Peppers I

I have made these twice now and both times, everyone loved them. THE ONLY change I made was to use 1 1/2 cans of tomato soup, tho one can would've been plenty, as they were quite juicy and there was quite a bit of sauce in the pan. The are excellent re-heated, too!

My Chili

Wow man this stuff was surprisingly DELICIOUS. Even my 7 yr old ate it. I was hesitant about the organo because I am not a big oregano fan. However, we couldn't even really taste it. This chili was very tangy---perhaps because of the large amount of onion in it? The only change I made was to use ground turkery. Absolutely will make again.

Cabbage Rolls II

Very tasty. Would've been better if I had basted the rolls with sauce while they were cooking--some parts of the cabbage were a little too chewy. Flavor of meat inside was very good. Like others, I made these changes to the recipe: steamed the whole head of cabbage first, tripled the sauce (I think doubling would be perfect), added 1/2 teas. pepper and this was plenty, used ground turkey instead of ground beef.

Green Salad with Cranberry Vinaigrette

Every adult at our Christmas dinner raved about this salad. What can I say? Delicious! I used dried cranberries but next time am going to try it with fresh. You might particularly appreciate the pretty pink dressing.

Twice Baked Cheesy Potatoes

Wow! Eveyone loved these. I made these the day before and, in my opinion, twice-baked potatoes are best made the day before. They sort of "set" and are less "mushy". The only change I made was to sprinkle a little paprika on top. The russet color looked pretty on the gold-colored potatoes.

Delicious Ham and Potato Soup

Whole family loved this. Only changes I made was to use turkey ham and a little less salt. I would recommend NOT using bacon or adding scallions. The flavor of this soup is so delicious as is, why change it to something else.

Amy's Delicious Turkey Burgers

These turned out beautifully. People said "Wow." when I set the platter on the table. They are nice, thick-looking burgers that kind of taste like meatloaf. The only change I made was to add less red pepper flakes. Served them on whole wheat buns with lettuce and tomato.
