Spicy Fish Tacos with Fresh Lime Sauce

First time we ever had fish tacos in this house. Made recipes exactly as stated. Quite tasty. My 12 year old wouldn't touch the coleslaw topping, so he just ate the fish and tomatoes in the taco shells. We thought this recipe was tasty, healthy, and kind of "special". Try it!

Eggs Benedict Casserole

Just served this for Christmas morning breakfast. The immediate comments were that it looked so beautiful. Someone said it looked like a picture out of a magazine. I made it exactly as stated in the recipe. I would not "ruin" it by adding cheese to it, as some reviewers have suggested. Let the hollandaise sauce shine thru, for something special and different. The ONLY suggestion I would make for improving it would be to make homemade hollandaise sauce---it is just that much better than the packaged variety and is not much more difficult than making the packaged kind (both you have to whisk it and watch it carefully on the stove as it thickens). So, the packaged variety doesn't really save you that much work.

Fast and Friendly Meatballs

Have made these several times. They are really good. I do use ground turkey and last time I made them, threw in quite a bit of fresh chopped parsley, just 'cause I had it to use up. They were wonderful. I mean, when there were only two meatballs left the next day, there was a discussion around the table about cutting them into halves so everyone could get half of a meatball. That should tell you how tasty they are. One word of caution: don't overcook meatballs. Pull them out of the oven when they are 'just done'. That way, they are nice and tender.

Chicken a la King I

Husband and young son loved this. Served over potato rolls purchased at the bakery. Threw in just a few peas. Also NOTE: freezes excellently, so make some now, throw some in the freezer, have it again next week.

Sweet and Spicy Green Beans

Have made this many times. Sticky, spicy, tangy and fabulous! You can't mess this recipe up. You can over cook it or under cook it and it still tastes good. Even tastes good cold the next day.

Eggplant Supper Soup

Collins Goulash

I am eating a bowl of this now. Very good. Creamy. My 10 yr old liked it and so did my husband. We added spices like others suggested (salt, pepper, garlic, rosemary). It's a keeper---good weeknight supper.

Jan's Chocolate Cake

I had to take a minute to put a review in here because this was such an exceptionally nice cake. I made it in a 9x13 and followed instructions exactly. It rose high in the pan and had such a lovely texture and taste. I don't think you can ask for anything more in a chocolate cake. I frosted it with a "5 min fudge" frosting that you boil. Everyone loved it.

Vegetarian Burrito Casserole

Oh my gosh people, this is a keeper! Make a 9x13 pan of it and just cut slabs off of it for days! Each day in the fridge, it tastes better and better. Absolutely delicious and different. Kind of like a Mexican lasagna. Only changes I made was chopped green chiles instead of jalapenos and I made in a 9X13, just laying the tortillas in the pan and tearing them as I needed to fit the shape of the pan.

Caramel Frosting I

Oh man, I just made this and took a taste and it is absolutely delicious! I used dark brown sugar. The color is lovely. Put it on a poppy seed 9x13 cake and I just know everyone is going to love it!!

Apple Bavarian Torte

Simple to make and looks beautiful on a nice serving plate. Taste is fabulous. Everyone loved it at our holiday gathering. This is really something special. Will make again and again when I need a nice dessert that everyone will like. Only change I made was to use walnuts (because I didn't have almonds on hand).

Ham and Potatoes Au Gratin

Wow what more do you need in a ham and potatoe casserole! Only changes I made was to use turkey ham, skim milk, less butter, and velveeta cheese slices (melts wonderfully)---all in an attempt to lower the fat content. Has an old-fasioned fantastic taste. Reheats in microwave beautifully the next day. Novella, you're Grandma had a good one here. Will make again and again over the years. Thanks.

Curry Chicken Salad

Just finished making this. Took 6 chicken breasts and put them in a foil pouch with slight amount of olive oil, salt, pepper and cooked for about 45 min at 350 degrees. Great way to get very moist chicken and easy clean up. This recipe is simple and in it's simplicity is delicious and special. Not a lot of "weird" ingredients. I also used half plain yogurt and half low fat mayo to make it healthier and even my husband, who is rather picky, thought it quite tasty.

Fish Chowder

Am eating my first bowl of this right now. Made it exactly as stated. Quite delicious, will make again. You have to kind of hover around the stove so that you don't overcook either the potatoes or the fish but it is worth it!

Two Ingredient Pumpkin Cake

Meatball Sandwich

Everyone from age 8-82 in my family loved this. My 8 year old previously didn't like meatballs but now he's a believer! I don't know what more you would want out of meatballs. The only change I made was to use ground turkey and people said you could not tell it was turkey. We ate this on Italian bread (both white and wheat Italian) with provolone cheese.
