Cajun Chicken Pasta

WOW! I used milk instead of cream and added 1 tsp of cornstarch to thicken it up. Fantastic recipe I will definately be making this a regular!!!! Thanks so much for sharing!

Greek Orzo Salad

Thank you so much for sharing this recipe! It is delicious! Very simple and easy to make. I chopped the onion up very fine and chopped the cucumber and tomato in small pieces. I used marinated artichoke hearts and chopped those up to. It sat in the fridge overnight and we ate it the next day. VERY VERY GOOD!

Italian Breaded Pork Chops

Yummy! I scaled the recipe down to serve 2 and followed the other reviewers advice about the breading. I cut it in half and it still was too much! I ended up throwing out over half of it. I also cooked the pork chops in the frying pan at a low temperature in butter as I find oil burns food faster. Next time I will try it in the oven as the recipe states (I am sure it would be less greasy). Very tasty! Thanks for sharing!

Baked Teriyaki Chicken

This sauce is amazing although I made a few tweaks. I added 1 cup orange juice to the sauce (scaled to serve 3, added a little more corn starch to thicken it, 3 cloves garlic and used 2 chicken legs. I found the extra liquid was perfect and added a great flavour to the chicken. 425 was way too high in my oven to cook the chicken so I turned it down to 350. Fantastic sauce! I will definatley try it with pork chops next time! Thanks for the great recipe.

Eggplant, Zucchini and Sweet Red Pepper Stew

Not good at all. I followed the recipe exactly and substituted 1/2 cup vinegar for the wine as that is supposed to be the proper substitute. It turned out to be a mushy mass of veggies. We love our vegetables but this just didn't cut it.

WOW! I scaled this for two servings and used 1 egg as well as 3/4 cup bread crumbs seasoned. It made more than enough WITH the pasta for 4 people. Thanks so much for sharing!

Eggplant Parmesan II

Excellent! I scaled this down for 3 servings and ended up using 3 eggs as well as 2 cups of bread crumbs. I made my own "italian" version by adding garlic powder, oregano, 2 tbs parmesan, salt, pepper and paprika. I followed some of the reviewer's advice and baked the eggplant for 10 minutes on each side. I recommend everyone do this as the eggplant was just cooked. I also sliced the eggplant to 1/4 inch slices as we don't like them too thin. My husband gave this a 10 out of a 5 :-). For those of you whose eggplant sticks to the pan without oiling your baking sheet, try parchment paper. ITS EXCELLENT! You don't have to use anything to grease your pans and nothing sticks. You can also reuse it. Thanks so much for sharing!

Chicken Enchiladas II

Excellent! I only had 4 large tortillas on hand so used those instead of 6. I am very glad I did as I don't think they would have been as satisfying if I had used 6 and the sauce would not have been sufficent for 6. Next time I make this I will substitue 4 fresh jalapeno peppers for the canned as it was a little on the salty side with the mushroom soup, cheese and canned peppers. Also I found the canned peppers weren't spicey at all. Thanks so much for sharing!

Basic Flaky Pie Crust

My one and ONLY pie crust recipe from now on. Turned out PERFECT!!!! Very very flaky and I doubled the recipe to make a double crust (no problems at all with the scaling!). Thanks so much for sharing!!

Blueberry Pie

WOW! I followed the recipe with a few adjustments. I used only 1/4 cup sugar as opposed to the 3/4 cup. I also omitted the cinnamon and increased the corn starch to 4 tablespoons as mentioned by the others. I baked the pie with the Flakiest pie crust recipe on this website (also excellent by the way) at 350F top shelf for 50 minutes and then switched it to the bottom shelf for 10 minutes at 400. I covered the edges of the crust with foil to stop it from burning and uncovered them for the last 10 minutes. DEFINATELY will make this again my hubby loved it!

Hearty Vegetable Soup

Extremly nutritious and tasty soup. I didn't add the peas, leeks or corn (personal preference) but substituted 1 can green beans and added orzo instead of rice ( also added 2 minced cloves of garlic and a few sprinkles or red pepper flakes to give it a little kick. ) Delicious!

Alternative Baked Salmon

WOW! Fantastic recipe! I found the bread crumb mixture was too dry with the 2T of mayo so I added a little more as well as 2 tablespoons of lemon juice as it added just the right flavour to the fish. I also had to bake it for 10 minutes longer than specified. Delicious will definately be my main salmon recipe!

Broccoli Beef II

This was soooo good! I used a regular onion instead of green onions (didn't have any) and used no yolk egg noodles instead of the linguine. I also added a splash of orange juice to the stir fry. WOW!

Classic Minestrone

Delicious! I added 1/2 lb of sauteed stewing beef (tossed in flour before cooked) to the soup and left out the macaroni. I also used an onion instead of the leeks. The flavour was amazing!

Coleslaw

I didn't like this at all! It wasn't tangy or tasty enough at all! I buy a vinegar & oil coleslaw at the grocery store and it is delicious, but this one just didn't cut the cake for me, sorry.

Best Peach Cobbler Ever

Delicious! I reduced the sugar to 3/4 cup and left out the water. I used canned peaches with no sugar added. There was exactly 1/2 peach juice in the can and I dissolved the corn starch in that. I baked it for 45 minutes and it came out perfect!
