Oatmeal Pancakes II

Very easy and quick and a nice change of pace from regular pancakes. I've used 1% milk many times instead of buttermilk and it still turns out well. The batter is a little thin, but don't worry about it. Thanks for the great recipe!

Breakfast Burritos

Pretty good. I added some green peppers, used sausage instead of bacon, and used less cheese. I froze the burritos we didn't eat that evening and have had them for breakfast the past few days. I topped the burritos off with salsa verde. I'll make this again.

Rosemary Turkey Meatloaf

I just made this recipe last week and with a few changes I'd probably make it again. The glaze was just a little too sweet for meatloaf I think. I'd cut down on the sugar in the glaze, and add something else to the loaf itself; maybe celery. This was only the second time I made meatloaf but the results wasn't bad. I might even mix ground sirloin with the turkey next time.

Ken's Spicy Curry Chicken

Definitely a bit spicy, but my gf and I liked it as is. I reduced the coconut milk by 1/2 can and it was just the right amount. We followed the recipe as is except for the fresh basil (and coconut milk) which we didn't have. We used dried and it was a mistake. DEFINITELY use fresh basil. I would make a suggestion of adding another half of a bell pepper, some julian carrots, and another 1/2 cup mushrooms. I think this would make it about perfect. Serve over Jasmine rice for a complete meal!

Chicken O'Neill

I made this a few days ago and really liked it. The flavors from the peppers and the white wine really took over the dish. I will make this again. Prep time was a bit but the cook time wasn't bad. Make sure you have a LARGE skillet when preparing.
