Roasted Rosemary Chicken And Vegetables

This recipe is amazing!! I used the canned tomatoes with the italian seasonings along with the fresh chopped roma tomatoes. Served with angel hair pasta and garlic toast and salad. Soooo good we had it twice in one week!

Chicken and Biscuit Casserole

I used the refrigerated biscuits on top, substitued some of the chicken broth with some heavy cream (about 1 cup), made sure the celery, onions and carrots were all roughtly the same size. My 8yr old loved it, sent the left overs to my dad's and now he wants it once a week! This is delish!! Thank you!

Salmon Chowder

I have solved the cheddar cheese dilema, campbells makes a cheddar cheese soup, I added a can of that along with fresh uncooked salmon & a half cup of heavy cream toward the end. Spiced it with lemon pepper & sea salt & this is definitely restaurant quality.

Best Ever Sloppy Joes

Easy & quick, had everything on hand except onion so just added a little onion powder and I mixed the cheese in while it was cooking. I served it on top of Texas Toast. Yum!! I tricked my picky 7 yr old by telling him it was a cheeseburger with ketchup and cheese already in it.

Golden Pork Chops

mmm this was good, I used the thick boneless pork chops from costco, browned & seasoned them & the onion, garlic & fresh mushrooms. Also I threw in potatoes cut up and sprinkled w/ rosemary, they baked right along w/ the pork. Thank you!!

Baked Chicken Broccoli and Rice

This was super easy. I also doctored it up a little. I took another's suggestion and added broccoli florets, also added about 2 small potatoes quartered & mixed it in with the rice & cream of mushroom soup. Added some rosemary, Mrs. Dash and other spices too. I also browned the chicken ( I used thighs) for about 6 min on each side before baking. Thanks for the super easy & tasty dish.

Roast Chicken with Rosemary

Easy, versatile and you really can't mess this up at all!! I usually butter it up like a turkey first (well it's not really butter, it's country crock). I have thrown the powdered gravy over the potatoes w/ some chicken broth, or some cream of mushroom over them as well.

MMMM mmmm mmm.. I renamed this "Hot dog Suprise" and wrap the regular size hot dogs in cheese & croissants. My 7yr old loves them, and adults over for Sunday Football do too!!

Chiles Rellenos Pie

This was pretty tasty but it still felt like something was missing!! I added cumin, chile powder, taco seasoning, green onions AND diced jalapenos to the flour/egg/sour cream mixture. It did give the dish some heat. My 7yr old ate it but even when he finished it, he said he still didn't know if he liked it or not!! I plan on heating the left overs tomorrow with refried beans and putting them in a burrito.

Ten Minute Enchilada Sauce

No more Las Palmas canned sauce for me!! This is wonderful the only thing I did different was use regular flour and for an extra "kick" I used the spicy tomato sauce by "el pato". Thanks for sharing this recipe!!

Mexican Baked Fish

This was very delicious, I have made it twice already, the first time with homemade salsa (very hot) and the second with my bf's suggestion of using pineapple mango salsa which was just ok to me but he loved it, I also used a combination of cheddar and monterey jack cheese.

Broccoli and Carrot Lasagna

I added fresh spinach and some sliced zucchini, used low fat versions of cottage cheese and parmesian and the skim mozeralla and let me tell you that between my bf, my 18 mo. old and myself there is just one little piece leftover for tomorrow's lunch! Will make again and possibly add chicken.

Awesome and Easy Creamy Corn Casserole

Loved it!! Took it to four Thanksgiving dinners including a work potluck and got wonderful comments from absolutely everybody!! I used margarine and fat free sourcream with excellent results. Comments ranged from recipe requests to comparisons to tamale masa. Thank you Ruthie!!

Chicken Jerusalem I

This dish was ok...I enjoyed it more than my bf...next time I will add some fresh mushrooms after pouring the sauce over the chicken and possibly add some sun dried tomatoes...bf suggested adding cayenne pepper to the sauce...I used the low fat cream cheese and no fat ranch dressing mix...I also served this over the asparagus-zucchini rice on this web site using brown rice.

Classy Chicken

Easy dish and always a hit. Took the advice of another reader and soaked the tomatoes in water. I've added bell peppers or broccoli, lots of mushrooms and have experimented with other veggie combos. Served this over asparagus-zuchinni rice from this website and was definitely a memorable meal that has been requested more than once.

Albondigas Soup I

Used ground turkey instead of beef and pork, brown instead of white rice, added potatoes and corn, substituted masa harina instead of cornmeal and used cilantro instead of basil. Also took the advice of other readers and used half beef broth and half chicken broth. Would rate this a 4 1/2 and only because I think I put too much rice in it and next time would add celery. Will definitely be making again! Thanks Kathy!
