Absolute Mexican Cornbread

This is simply a wonderful recipe! This has become one of my staple dishes to take to family functions and pot luck dinners. I made it the first time for a fiesta themed dinner party. After reading other reviewer's suggestions, I half the butter quantity. One stick of butter is plenty for this recipe. I also omit the peppers, because of my personal preferences. I occasionally use the taco seasoned cheese, or the Monterrey Jack combo that is available in the grocery store.

Strawberry Rhubarb Muffins

These muffins are very good, but they turned out a little dry. I didn't have the flours this recipe called for, so I substituted some whole grain pancake flour I had in the house. I also added a little sprinkle of brown sugar on top. Next time, I will add a little more rhubarb and strawberries.

Low Sugar Strawberry Rhubarb Crunch

This recipe is fabulous! I did add more honey (2 Tbs) and 2 Tbs of Corn Starch as recommended by others. I will definitely be making this again!

Salmon and Swiss Chard Quiche

Made this to use up some Swiss Chard I had in the house. It is delicious! I skipped the step that calls for cooking the salmon in the milk and substituted canned salmon, because I didn't have any fresh. I also added some fresh parsley, and topped it with some grated cheese during the last five minutes of baking. I will definitely be making this again.

Sugar Cookie Icing

This recipe is fabulous! I found that I needed a little more milk than it called for to make the icing workable. When it dries, this icing is nice and hard, makes the cookies very easy to pack!

The Best Rolled Sugar Cookies

The name says it all for these cookies! I made these for a party, and everyone said they were the best sugar cookies they had ever had. It is very important to use lots of confectioner's sugar when you roll these out - it keeps them from sticking. They are best when they are rolled at 1/4 inches thick. I iced these with the "Sugar Cookie Icing" found on this site.

Peach Brulee

Easy, fast and delicious! I used up some fresh peaches I had in the fridge, and crushed walnuts because that's what I had in the house. To give it a little sauce, I melted 1 Tbs of butter and poured it over the peaches and nuts. I also stirred the everything up a little to coat the peaches before I put it into the oven.

Portobello Mushroom Pasta

Very tasty and flexible recipe. I substituted some sliced asparagus for the zucchini because that's what I had in the house. I also added some seasonings (onion powder and Italian seasoning).
