Apple-Stuffed Acorn Squash

Mayan Couscous

Wonderful dish for an adventurous palate. Would be great to pack in your lunchbox to take to work and eat it cold. I left the jalapeno and onion off of one portion for my 2 year old, and he liked it! I was surprised that one reviewer said this was a littler under-seasoned. I thought the flavor was very spicy, rich and complex. I especially like recipes that don't require a lot of prep time, so this is a good recipe to whip up relatively quickly and still have something healthy.

Caesar BLT Wraps

Easy, healthy, tasty. I substituted light dressing, shredded cabbage, whole wheat tortillas and turkey bacon, but the result was basically the same and about as tasty. Wrapped in plastic wrap it makes an easy grab n go lunch.

Blue Cheese Stuffed Mushrooms with Grilled Onions

Very tasty very simple recipe. My husband and I really enjoyed these, but my toddler was unimpressed. I grabbed an onion on my fork, then a mushroom and popped both in my mouth at the same time. Mmm! Has to be a little healthier than breaded and fried mushrooms, right?

Coconut Curried Tofu with Green Beans and Coconut Rice

My only issue with this recipe is that it is far too small for a meal. For my husband, myself, and our toddler to eat I need to triple the recipe.

Balsamic Pear, Chicken, and Asparagus

There were some interesting flavors in here. It was easy to make, but I didn't pre-cook the chicken; I just let it cook in the slow-cooker. My husband and son liked it. It's healthy, so that's a plus. I give it 4 stars, because I liked it but I didn't love it.

Creamed Cabbage

This is like my ideal recipe. Its SO tasty. And I don't even really like cabbage. Ingredients I already have lying around. Few ingredients. Not very time-consuming. Possibly not that healthy though... ;)

Crustless Bacon and Cheese Quiche

I found the egg to be a bit too dry, which could be remedied by adding more regular sour cream. I might not have put enough tomato in, which also would have added some moisture. It isn't the same without the crust, but we were looking for low carb stuff. I made this for my family for dinner, and will probably make it again.

Shepherd's Pie

Delicious and simpler than the other shepherd's pie recipes. I wanted MORE. We used 9 inch round baking pan instead of pie pan. Our potatoes on top were a little thick to try to spread, but no one seemed to care. Also added a little extra ketchup. Yummy. UPDATE: Using extra ketchup in the meat and using Betty Crocker "Loaded mash potatoes" adds a lot of good flavor to this! But I found with the Betty Crocker instant potatoes, you'll need extra milk.

Boxty

The boxty was sort of bland. I wish the batter was not so thick, because they didn't cook through very easily on the griddle. I'd like to see the recipe revamped for a thinner batter, use frozen hash browns instead of shredding your own potato, and also with some cheese in it or something (but I guess you could top it with whatever you want). Something kinda weird was that the leftover batter has a chemical reaction with the air and turns weird colors over a few hours.
