Crustless Spinach Quiche

This is a winner tonight! Husband asked for it to be placed on the main list of dinners to have and he always says he doesn't like quiche! Note: I used half as much cheese as they recommended. I use a little bit of medium cheddar, parmesan, low fat mozerella and feta. Coconut oil was used instead the unhealthy vegetable oil. I used 3/4 package frozen spinach, 1/2 sweet onion, 6 oz sliced mushrooms, 1/2 bell pepper, satayed in coconut oil with a bit of white wine at the end cooked out. Spices added: sea salt, fresh ground pepper, a dash of nutmeg and a dash chili pepper. Enjoy!

Pesto Polenta Lasagna

Delightfully delicous! I added fat free cottage cheese and (steamed and drained) spinach to the layers and some fresh basil, topped with a few slice black olives. My husband loves it, he took what was leftover to work for lunch and co-workers were so jealous! This is a keeper!

Zucchini Brownies

Pretty good, but I used unsweetened applesauce instead of oil, light Smart Balance margarine for the icing and added a tablespoon of Trader Joe's instant coffee to the cocoa in the icing. Great moist brownies!

Chuck's Favorite Mac and Cheese

Extremely delicious! I am watching my fat content so I make mine with nonfat cottage cheese and low fat chedder from Trader Joe's , nonfat sour cream and yummers! Even my husband doesn't know the difference. Best Mac & Cheese recipe yet!
