Crispy Coconut Chicken Fingers

Reviewed: Aug. 15, 2002
This dish was moist and delicious, but I made a few changes. I added several dashes of curry powder, which was really wonderful. Also, I never turned it so that it would be crispy on the top (it worked!). I also needed another egg and more coconut/flour mixture than it called for. It was also labor intensive but really yummy!

Chinese Chicken Fried Rice II

Reviewed: Aug. 15, 2002
This needed some alteration, but turned out great. And bear in mind it's a lot of work and requires significant chopping. I added green onion and chopped ed pepper, as well as teriyaki sauce. I also added some red pepper flakes for spice. And at the last minute, I added some pineapple and pineapple juice and cashews for a special treat. My boyfriend loved it! It made a lot.

Amy's Garlic Egg Chicken

Reviewed: Aug. 15, 2002
This was super easy and soooo delicious. It tastes just like scampi, without the lemon. I would recommend reducing the butter and garlic.

Philly Mashed Potatoes

Reviewed: Aug. 15, 2002
This was really creamy and delicious, if a bit labor intensive. I used scallion cream cheese because I had it and it turned out great!

Filet Mignon with Rich Balsamic Glaze

Reviewed: Aug. 15, 2002
This dish was very easy and tasted very good, but it smelled bad when it cooked- extremely pungent odor.

Creamy Garlic Dip

Reviewed: Aug. 22, 2002
This was really great but definitely needed some time to sit before serving. I tasted it right after mixing and it tasted like just plain sourcream. 30 minutes later, it was really good. I had added more garlic powder (before it set) and it was great.

Ultimate Twice Baked Potatoes

Reviewed: Aug. 22, 2002
Pretty presentation, but too runny- next time I will use half the sour cream and less pepper.

Asian Tuna Patties

Reviewed: Aug. 29, 2002
Interesting combination of flavors- like nothing I had ever had before. Needed something else though... next time perhaps some fresh grated ginger, crushed red pepper flakes, more teriyaki sauce. Nice texture though.

Banana Frittata

Reviewed: Aug. 29, 2002
Interesting. Eggy. Too much oil/butter, though. Overpowering flavor of bananas. Next time I'll add vanilla, less bananas, and sprinkle with powdered sugar.

Pumpkin Spice Cookie

Reviewed: Oct. 22, 2002
I made this as a cake and baked it for 30 or so minutes at 325, then when cool I added cinnamon walnut cream cheese frosting to make a decadent top to a fat free cake. It was awesome! I recommend this highly- it tasted just like carrot cake with cream cheese frosting!

Baked Mashed Potatoes

Reviewed: Oct. 22, 2002
I decreased the amount of butter and cream cheese, increased the amount of milk and added green onions and this was the most creamy, wonderful dish I have ever served. Melts in your mouth. Be sure to use Yukon Gold potatoes- they really make a difference.

Sooooo good. Makes a huge pie but it shrinks as it cooks. Hands down the best apple pie I have ever had.

Candied Chicken Breasts

Reviewed: Apr. 14, 2003
This turned out excellent! I made a few adjustments- less breadcrumbs (use 1/2 cup at most), 1/2 tsp pepper (not a whole tsp), add 1 tsp onion powder, no need to add salt to the sauce, and no need to grease the pan. Plus I chopped the onion instead of grating it and it worked just fine. I omitted the pineapple- no need to add sweetness. This is a delicious dinner!

Curried Chicken and Rice Salad

Reviewed: May 23, 2003
This was excellent! I made a few adjustments. I used apricot preserves instead of chutney (what I had on hand), omitted the pepper since I didn't have any, and substituted cucumber for celery (don't like celery). I also used regular salt, added more curry powder for flavor and some cayenne pepper for spice. I also added chopped cashews because the flavors blend well (and I didn't have any pine nuts). Definitely marinate overnight- it makes a difference and marries the flavors well. Thanks!

Sesame Pasta Chicken Salad

Reviewed: Jun. 17, 2003
Very tasty! I modified the recipe- reducing the oil to 1/4 cup (next time I will use a lighter tasting oil like olive rather than vegetable), used only 1/4 c. soy sauce b/c I only have reg. (not reduced sodium), omitted the cilantro because I don't like the taste (although I can see what it would add) and added some lightly steamed broccoli and chopped orange peppers. I also added 1/4 tsp red pepper flakes for zip. And I didn't shred the chicken, I sliced it. It was great after a little while in the fridge (cold) but I bet it will be even better tomorrow! It makes a lot of pasta. And in my experience, order of operations isn't that important, just mix it all up and chill well! I revise what I had said earlier, this was better heated!

Salsa Chicken

Reviewed: Aug. 14, 2003
I modified the recipe and it came out great. I marinated the chicken breasts overnight in a mixture of lime juice, olive oil, and some spices. Then I pan fried it in olive oil cooking with shallots, just for a few minutes. Then I put it in a casserole dish with 1.5 cups of salsa combined with the kernels I cut off 2 corn ears (very pretty). I baked it at 375 for 20 minutes or so, then I put mozzerella cheese on top and baked it 5 more minutes. At the end I put a dollop of sour cream on each breast and it came out great! I served it with tomato basil rice from Uncle Ben's that I livened up with some spices. Reasonably healthy and very presentable!
