Easy Irish Colcannon

It was okay, but the cabbage flavor sort of disappeared in the potatoes, yet the potatoes "weren't quite right" either. It did make great potato patties though.

Ukrainian Meat Filled Cabbage Rolls

Loved the creamy sauce vs. the usual tomato variety. The filling was a switch from the rice we normally see too. Very flavorful. My family said it was definitely a "keeper."

Chicken Fiesta Salad

Slow Cooker Cranberry Sauce

This was really good! Made it for Thanksgiving this year. Was worried it wouldn't thicken up, but it worked great. Next time I think I will omit the cinnamon. You could really taste the orange juice. I will always use the crock pot for my cranberry sauce now. Thank you for sharing.

Best Egg Rolls

This is wonderful. I love egg rolls, but had never tried making them from scratch. I used leftover pork roast and omitted the sesame seeds, as a family preference. They were loved by all. I do think next time I will add a bit more garlic, ginger, and some soy sauce to the meat mixture.

Toffee Bars

This is a good bar, but not what I had expected. If you want an alternative to choc. brownies, this is a good option. I used English toffee bits as opposed to the nuts because of the allergy issues. I also used chocolate chips in place of the choc. bars. Got good reviews at the church pitch-in luncheon and from family members at home.

Grilled Bacon Jalapeno Wraps

Yummy good. My family love poppers, but these are so easy and forget the breading! Did them in the broiler, due to pouring rain, but scrumptious just the same.

White and Wild Rice Pilaf

This fits the bill perfectly. My son had been wanting some pilaf, so I went looking for a wild rice pilaf that didn't use brown rice. Left out the carrots and celery, but added mushrooms. Used chicken broth instead of the vegetable broth. The family raved about it. Nice addition to my repertoire. Thank you for sharing!

Squash with Tomato and Feta Cheese

Very tasty... savory rather than sweet. My family love simple baked squash with butter, but get tired of the same dishes. I did not have the stuffing mix or green onions, so I used bread crumbs and poultry seasoning with finely chopped onion. Since I was grilling chicken, I put it in a greased cast iron skillet and set it on the grill beside the chicken. It worked great! My husband still prefers it baked with butter, but this recipes gives the rest of us some variety. Will make again.

Hush Puppies I

This is a great recipe. I have used a very similar recipe for years. It used baking soda as opposed to the baking powder, but the same otherwise. I like to add some cayenne pepper or chopped jalapenos to step up the flavor, since my family like spicy foods.

Stuffed Cabbage Rolls

Made this for supper tonight. It was a big hit, even with my son who isn't wild about cooked cabbage. I did tweak it a bit to suit our preferences and my convenience. I used 1 pound of hamburger and 1 pound of sage sausage. Seasoned, crushed tomatoes were substituted in place of the tomato soup and I baked it in the oven for 1 hour. Thanks for this basic start to a great dish. Never made them before, but definitely will again.
