White Chocolate and Cranberry Cookies

I'll start by saying that my wife told me that these were the "Best Cookies that I've ever eaten in my ENTIRE life!" Now, I won't tell you how old she is but I will say that she's had time to eat more than a few cookies...enough said. LOL Ok, so this is what I did; I doubled the recipe, cut the sugar by a 1/4 cup each, added 1 1/2 cups of dried cranberries and about a cup of my special honey roasted and salted walnuts (chopped), and added a large box of vanilla pudding mix to the dry mix. I also used a TBSP of vanilla to sub for the brandy. Baked them for 9 minutes at 350 in small batches of small cookies and...(according to my wife) I made the best cookies ever! And, I will make them again, and again, and ... you get the idea. (As a side note, I did everything else that the recipe called for in the doubling.)

Strawberry Streusel Muffins

Mini Muffins strike again! I made these a couple of days ago with some luscious sweet local berries. After reading a select group of the reviews I made a few changes of my own. First, I used 2 cups of berries. (Can you ever have too many strawberries?) Then I blended 3 TBS of strawberry jam to the diced strawberries to add a little sweetness. In the dry mixture I added a 1/2 TBS of ground cinnamon. My cook time on the minis' was 15 minutes. They turned out 'pop in your mouth' yummy.

Oatmeal-Cinnamon Muffins

What do YOU do when you find a recipe that looks good but you don't have everything that you need? I improvise. No buttermilk? I used 2/3 cup of lowfat vanilla yogurt mixed with 1/3 cup of water. Added that to the oats...then the eggs and 1 cup of a mix of raisins and crasins and let it sit while I did the dry. Oh, I forgot to mention that I added a 1/2 cup of apple sauce for good measure. Mixed 1 1/2 tsp cinnamon, a 1/4 tsp of nutmeg, and the remaining dry. Added the dry to the wet after about 10 minutes. Sprayed 2 mini muffin pans and added about 1 TBS to each cup. Sprinkled the top with cinnamon sugar and baked at 350 for 15 minutes. They turned out GRAND! Healthy and yummy. You can't beat that!
