Cola Cake

This was super easy. I used a sugar-free box of yellow cake mix (16 oz instead of 18.25) and 1 1/4 cups of diet orange soda. Not enough batter for a 9 x 13 pan, so used a smaller round cake pan and put the excess in a muffin baking pan. The cake was surprisingly good and it rose as much as I think it would have had I made it the regular way. Thanks for the great idea!

Smothered Filet Mignon

This recipe was awesome! Loved the blue cheese. Altered the marinade - used actual dijon mustard and red cooking wine in place of the balsamic. It was great! Also cooked up some bacon and crumbled on top with the onion and and blue cheese. It was delicious!

Broiled Tilapia Parmesan

This was really, really good. I brushed the fish with a mixture of olive oil and garlic powder before broiling - didn't have celery salt so added a little garlic powder to the mixture as well. Like another reviewer, I didn't bother to flip the fish - broiled for 5 minutes, removed from oven, put mixture on top and then broiled for 2 more. The topping was slightly browned and bubbling. It was SO GOOD! What a great recipe!

Caramel Apple Pork Chops

This was delicious! I omitted the nutmeg (didn't have it) and also I didn't have enough butter to double the sauce like I wanted, so I added in some olive oil; simmered the sauce + apples on the stove for about 15 minutes before removing the apples, laying them on the chops, and then added a little cornstarch to the remaining sauce to thicken slightly. Poured the sauce over the chops, and baked in the oven, covered with tinfoil, at 350 for 25 minutes - then smashed some walnuts in a bag and added brown sugar. Spread walnuts and brown sugar on top of chops - baked for about 20 additional minutes, until pork reached 155 degrees. Was delicious and juicy...Thanks for the recipe!

Artichoke Spinach Lasagna

Chocolate Chip Banana Bread II

This bread is amazing! I also used butter instead of shortening without a problem - was low on white sugar as well so swapped in some dark brown. It's delicious!
