Flayed Man Cheese Ball

This is a great Halloween party appetizer. It's not complicated but it is more difficult and time consuming than you'd think from watching the video. I used my food processor and my stand mixer to save time and my wrists,so it was pretty quick. I must note that some people were really intimidated by this dish, some didn't want to look at it and others were afraid to cut into it (they went for the eyes first). The presentation just gets more gruesome from there. Those who were brave enough to eat it loved it and took pictures of it.

Slow Cooker Collard Greens

I only ate greens at my grandmother's as a child. She served them with vinegar on the side. So I never learned about the baking soda! Also grandma didn't eat spicey food so I never had collards with jalapeƱos. Wow! This was soooo good. I like it hot and it just gets better and better over time. I used bacon ends because that was all I had. Now I know what those giant crockpots are made for because those greens really take up a lot of space until they shrink down. I am going to get a bigger slow cooker for next time so I can make even more!

Italian Restaurant-Style Dressing

I loved this dressing, it was very good. Be careful with the oregano,depending on what kind you have it can easily overpower everything else. I didn't have pectin and I used sugar (dissolved into the vinegar)instead of corn syrup so it wasn't very thick -just toss it in your salad just before you serve if you make it like I did. Tasted just like I remember a famous Italian Resteraunt chain serves. Thanks!

Portobello Mushroom Burgers

I really liked this recipe, it was delicious. I didn't have dried basil so I used fresh and it worked out fine. I would make more of the marinade and put the shrooms top side down to start and pour the marinade into the gills,it soaks it up nicely! Then use the extra marinade to bast the tops when you turn them over. Next time I will try to peel the tops first as well. Didn't have provolone so I used goat cheese, I think a lot of melty white cheeses would work nicely in this recipe.

Sesame Noodle Salad

This is a good recipe,perhaps better if I had followed it to the letter. I used rice vinegar instead of balsamic and brown sugar instead of white, seemed more appropriate. It still needed something so I added a tablespoon of peanut butter to the sauce. Tossed it in gluten free spaghetti noodles. Served it cold at a picnic, everybody loved it. Definitely go with the toasted sesame seeds

Jelly Bean Nests

I did not use marshmallows at all. I used melted butterscotch morsels for one batch and melted chocolate morsels for another. For the eggs I did not use jelly beans, I used Reese's mini peanut butter Easter eggs and also pastel mini malted milk ball Easter eggs. So it isn't really this recipe but this is where I got the idea from. A tasty variation on the same theme for Easter. So cute!

Garbanzo Bean Chocolate Cake (Gluten Free!)

This cake was so easy to make. I read the reviews before attempting because they are usually helpful and have good advice. I used dark chocolate morsels. I was going to add vanilla like some reviews suggested but forgot. It was very chocolatey and delicious anyway, I will try the vanilla next time. The density and size is similar to that of a cheesecake so you might want to double the recipe and stack two with a filling in between if you are taking it to a party. I don't have doilies so I used paper stencils with powdered sugar to make it pretty for Easter. It was a hit : )

Chef John's Caramel Apple Pie

This was the second apple pie I have ever made in my life and it was probably the best tasting apple pie I have ever tasted too. This is High praise because I am not a baker nor a big dessert fan. Love the fact that I could watch a visual demo beforehand too. Everything this guy makes looks awesome. Hint: the kind of apple you choose can make a huge difference.

Campbell's Kitchen Beef Stroganoff

This was very quick to make. It's probably not more difficult than classic stroganoff, just less time consuming and you can make it when you don't have fresh ingredients. Reading the other reviews I see many of us made similar alterations with better results. 1. two cans of soup ( I used 1 can cream of chicken and 1 can cream of mushroom) 2. more seasonings (seriously) I used garlic powder, parmesan cheese and fresh ground pepper. I also used yogurt and the whole bag of noodles. Yummy. I would make this again with the addition of fresh mushrooms.

Jalapeno Popper Spread

I made this for a party recently. I always heed reader reviews so I made sure not to deviate from the recipe. I used shredded parmesan-not powdered. I browned it in the oven. I served it in a little mini-crockpot. It was a HUGE hit. I would have thought my healthy foodie friends would be too particular to eat it, I was amazed how they ate it up!
