I am an older mother of a young son experiencing Autism. I love to cook and I love to eat! I am in love with my Crock pot. I am lucky to have a partner who loves everything I make because it's usually experimental and I don't always know how it will turn out! This picture is an old school Fisher Price Little People representation of him at the table.
My favorite things to cook
Ii love to make fresh Mexican food. I also love to try to cook Asian food! I also love to use my slow cooker to cook anything you can in one.
My favorite family cooking traditions
My large extended family always follows a menu for the holidays that was set down by my grandmother many years ago. I always look forward to these foods prepared by my aunts every year just like my grandmother made them.

Flayed Man Cheese Ball
This is a great Halloween party appetizer. It's not complicated but it is more difficult and time consuming than you'd think from watching the video. I used my food processor and my stand mixer to save time and my wrists,so it was pretty quick. I must note that some people were really intimidated by this dish, some didn't want to look at it and others were afraid to cut into it (they went for the eyes first). The presentation just gets more gruesome from there. Those who were brave enough to eat it loved it and took pictures of it.

Slow Cooker Collard Greens
I only ate greens at my grandmother's as a child. She served them with vinegar on the side. So I never learned about the baking soda! Also grandma didn't eat spicey food so I never had collards with jalapeƱos. Wow! This was soooo good. I like it hot and it just gets better and better over time. I used bacon ends because that was all I had. Now I know what those giant crockpots are made for because those greens really take up a lot of space until they shrink down. I am going to get a bigger slow cooker for next time so I can make even more!

Italian Restaurant-Style Dressing
I loved this dressing, it was very good. Be careful with the oregano,depending on what kind you have it can easily overpower everything else. I didn't have pectin and I used sugar (dissolved into the vinegar)instead of corn syrup so it wasn't very thick -just toss it in your salad just before you serve if you make it like I did. Tasted just like I remember a famous Italian Resteraunt chain serves. Thanks!
