Emily's Famous Hash Browns

super easy- i made these in a large crepe pan with 1/4 inch lip... obviously i used less oil than called for (i didnt measure it) and easily flipped the whole thing over. Also added about 1 Tbsp butter to the oil. Awesome.

Cinnamon-Swirl Raisin Bread

Everyone loved this bread! I only had one loaf pan, so I did one loaf in that pand and one free-form loaf... it turned out great! My only advice is to make sure you roll it tight. I will make this many more times!

Tender Potato Rolls

These were so easy to make! The dough rose easily in the fridge... so have it in a large bowl for sure so there is room enough! I'm still amazed. They are so light and delicious. This recipe is going to stay in the family. Wow. Soooo good! A+++

Soft Christmas Cookies

I baked these exactly as directed, except I used my Silpat instead of parchment paper. The cookies are soft without tasting underdone. Excellent cookies. They rolled out nicely too.

Red Velvet Cake

This cake was a lot of fun to make, but it did turn out a little try for me. I followed the directions exactly-- I should have listened to others and checked on it a little earlier. The icing was AMAZING and I will use it for other cakes. It spreads easily and is easy to make. It wasn't grainy for me at all either. I used my mixer. It's a 5 star icing.

Very tastey! I would go with a little more of the brown sugar mix, but otherwise no problems at all making this without a bread machine. I just followed the review suggestions. Easy, easy and a keeper!

Banana Streusel Muffins

These are excellent muffins. They are light and fluffy... they freeze very well. They have almost a lemony essence to them and not an overwhelming fake banana taste. Amazing. Everyone should make these! And see the pictures too... I added mine!

Mediterranean Black Olive Bread

This is a very flavorful bread! I used my KitchenAid mixer for the first stage, using the paddle and then the dough hook for about 5 minutes. I had to add some flour at this stage because the dough was way too sticky! I used brined black and green mediterranean olives- about a 1 1/2 cups before I pitted them (the black were easier to pit). I added them whole into the mixer when there was about 1 minute left of machine kneading. I hand kneaded it after that. The top was a little browner than I was hoping for- I'll pay more attention next time. I can hardly wait to toast this bread!

Mocha Chocolate Chip Banana Muffins

No-Bake Chocolate Yule Log with Chocolate Mushrooms

We've been making this Bûche for the past 2 Christmas holidays. It's amazing how the flavors meld together when it rests! The wafers get soft and really incorporate themselves well. This log is nice and light-- not too sweet either. We use raspberry jam with a little liquor. The nonpareils and kisses are all extra stuff. Can't say enough positive about this one! :)

Turkey Potato Casserole

This really was just average for me. I added about 1/2 cup of onion and also used a drained can of green beans instead of corn. While it was nice to use up some of my leftovers, I found this frankly unexiciting. Sorry!

White Chocolate Chip Oatmeal Cookies

Overall, fairly good. I was hoping for chewey and less spreading out. My butter was softened at room temp (which was at least 80 degrees). I will try this again and not let the butter get so soft. Also, I used toasted almonds and chocolate chips. The taste is good- I just wish they weren't so flat! *But, I will make them again!

Triple Berry Crisp

I used this crust with peaches. I tossed with the same amount of sugar as in the recipe, probably used about 12 fresh peaches. Everyone raved about it and still does... months after. A keeper for life!

Baker's Secret Pie Crust

I would recommend that you try this recipe out a few days in advance to make sure of the end result and your ability to do it. I used this recipe the first time to make 4 crusts. I ended up with crusts that are way too dry and cracking as I try to fold them. I literally was screaming in the kitchen, as it is Thanksgiving morning and now I have to redo my crusts.

Satay Sauce

I added about a teaspoon of garlic and used about a 2 1/2 teaspoons of cayenne powder (I didn't have any flakes, and I am a hot-food freak). Also, I used a 14 ounce can of coconut milk. This turned out very nice! I'm curious to try it out as a marinade (and may up my rating later, if I can!).

Beer Roasted Lime Chicken

4 stars because the chicken is very moist. I didn't get a very strong lime flavor- however, I didn't have any limes. I used lime concentrate and put a lime-soaked onion slice in the cavity. I will try this again, but with lime slices. Also, it didn't get as brown as I like.
