Chicken with Chipotle

I find this tasty as is, but reduce the chicken bouillon by 1/4 or more, planning on trying low fat sour cream next. I do prefer to add extra chipotles for spice but really this recipe doesn't need the addition of other ingredients. I only make it with boneless breast but betting brown chicken tastes even better. Yesterday I decided to use the sauce as enchilada sauce. Cooked the chicken in the sauce still, just reserved the better part of it for the enchiladas. Some yellow corn tortillas, jack and cheddar cheese and this was a hit, just thinking about it now is making me hungry.

Caldo de Res (Mexican Beef Soup)

Been a while since I made this soup so came here to have my mind refreshed. This is very close to how I make it, except I use stewed canned tomatoes and a beef bouillon cube instead of the beef broth. I also like to blend a potato in water and add it for thickness. This is a very good recipe, some don't have the step of frying up the meat which makes a huge differnce. Excellent recipe, yields a great flavor soup that the whole family can appreciate. Don't understand the reviews complaining about all that is involved, I guess I am just used to cooking because the steps take me about 20 mins, and once it is simmering there is plenty of time to clean up or write reviews before having to add the veggies. Oh I add cumin sometimes and serve it up with tortillas.

Southwestern Egg Rolls

My daughter is the usually the one who inspires me to try recipes and mimic restaurant food items, if I don't when we go out to a family dinner she always picks the same places. She has decided she loves these more than the ones at Chilis, she even said last time we were there that theirs did not taste as good anymore. Unfortunately, these are not too healthy with the frying of tortillas, but I still make them occasionally. To reduce the unhealthiness I just make the filling for lunch without the cheese, and pair it with some beans or quinoa. This recipe is a keeper!

Pecan Turtle Bars

I only read a couple reviews before attempting this, so I was unaware of it tasting like toffee. I am not a huge fan of toffee and was actually expecting the middle to resemble a pecan pie somewhat. Overall they were still tasty, the kids loved them. I also upped the flour to nearly 2 cups. I added about 2 extra tbsp to the butter mixture, I was scared to double it for fear of them being too greasy. I was careful poring it and it was more than enough to cover the whole thing. They did turn out a bit greasy but not too bad, napkins are a must though. I had no issues removing then from the pan, the middle was a little more soggy and the edges were crisp. I think I will try the crust with a no corn syrup pecan pie recipe for the filling next time. Oh one more thing I only had a little less than a cup of chocolate chips, I carefully spead them out, returned it to the oven and 4 mins later pulled it out. I managed to spread the chips evenly when melted. I really think more chips would have made it far too sweet. I used semi-sweet.

Pecan Pie V

I followed some of the suggestions like first 10 min at 350 then 45 at 300 and it was done, chilled it on the counter 30 mins and in the fridge 30 mins just to make sure it was set. This was my first attempt at a pecan pie so I was playing the guessing game while worrying it would fall apart after trying to slice it so soon after it was done. I also added 1/2 cup extra pecans and reduced the sugar by some. I also reduced the butter by 1 1/2 tbs. This pie was not overly sweet, just right. Will try all brown sugar next time. Got rave reviews even from my ridiculously picky 4 yr old (seriously don't know how he survives sometimes). Will make this again just not too soon, this pie could be trouble cause of how delicious and simple it is to make.

Tom Yum Koong Soup

My daughter was obsessed with a specific Thai restaurant in Los angeles that served this soup. Since moving 90 miles away we could only get it for her once in a blue moon. I really thought I could not replicate the taste of their soup but with this recipe, I got the biggest hug and "thank u mommy!" from my daughter. I don't know where to get shrimp heads from so I buy raw shelled shrimp and boil them til cooked with a little salt, lime, and one small piece of lemon grass. I strain the shrimp and use that shrimp water to continue boiling the shells as my broth. I blend a couple shrimps too for extra flavor. I keep the shrimps in the fridge and add them when the soup is served individually. That makes the shrimp taste perfect and not rubbery. I also boil all the other ingredients for double the time (except mushrooms) and I leave the Tom yum paste and chili paste on the table instead of adding to the soup so we have a clear soup and everyone can choose the amount they like added. I have made this 3 times since I found an Asian market that carried everything. Most of the items like then chili pods, lemon grass and leaves are sold in large packets so I freeze the extras for later use. I also added king crab and or snow crab legs the last five minutes of cooking. This recipe is a keeper. Thanks

Turkey Pinwheel

I didn't make as described because I wanted more in my pinwheel. I only had 6 oz turkey so I made one for 2 servings. I used only the egg white and after flattening the turkey out I decided to chop onions, garlic, green and red pepper and smush them into the flattened turkey. I used fresh spinach also and used cayene as well. This may sound odd but another turkey recipe I used had cocoa powder in it, so I spinkled a very minimal amount on the turkey. I do think this might call for spaghetti sauce instead but I felt it really could have even not used any sauce. This is only the 3 rd time I have used ground turkey because I hated it, well no more. Mine was so small it cooked in about 30 mins.

Pesto Grilled Cheese Sandwich

I took this recipe and added some rotisserie chicken from the market. I also made my own pesto sauce using pesto,basil, garlic,olive oil,vegetable oil, salt, pepper, and almonds. I have no need to eat at panera bread anymore this was fantastic. Thanks. Oh skipped the American cheese.

Buttery Soft Pretzels

these are fantastic! Kneading it was a pain and a bit hard, so was rolling it out, but it was all so worth it. I do think the half cup baking soda and 4 cups water can be reduced. Going to make this again, and again and so on

Cream Cheese Bars I

so I had a cream cheese frosting that was going to expire and my dad had bought an extra yellow cake mix the day before. I found this recipe gave it a shot. I mixed the frosting with vanilla and one egg. I added chocolate chips on one side between the layers. Other than that I followed the directions. I never had anything like this, it was pretty tasty, just a little too sweet. I will make again with minor adjustments.

Chicken Enchilada Soup III

I did not have masa harina so I just crumbled like a dozen or so corn tortillas in the soup and they dissolved just fine. I also boiled my chicken instead of frying, I figured it works for chicken soup so why not enchilada soup. I just boil the chicken with chicken base, cumin garlic salt, onion powder, pepper and coriander. Sometimes I over boil a bit so it shreds easily, and always let it cool in its broth so its tender and juicy. I think that works out better so I have the fresh chicken broth, for more flavor I get some chicken bones from the meat market. Anyways I loved this combo it was a little spicy but so good, gave a bowl to my sister who usually sneers at my food and she enjoyed it. I will make again. (hope sister does not read reviews on this site, lol)

Baked Pork Chops I

Everyone in my house loves these. Even my father in law who claims pork gives him tummy aches, eats these up. (cooking is a pain with 3 picky kids and an even pickier FIL, lol)I don't always make the sauce because the chops on their own are great, especially when paired with biscuits and gravy. If the chops are thin enough sometimes they don't require any bake time, but if they do I find that an hour is way too long. Thanks for this recipe its an A++ in my book.

Turkey Brine

I have only made about two turkeys, the first was just buttered, I preferred this way more. Usually I find turkey dry, but this yielded a juicy turkey. I will make this again. Only downside was I had to spend like nearly 15 dollars on the ingredients, not including the turkey and I had to buy a food grade bucket, another $15. But the bucket has come in handy for other recipes.

Chicken Teriyaki

Let me start by saying I don't even like Teriyaki, I tried this because the hubby and son love it. I have made this like 10 times already and its fantastic. I use brown sugar instead of white, I also use low sodium soy sauce, and use all of the pineapple juice. The sauce is flavorful enough that I don't salt the chicken. The first time I made this my 2 yr old ate 8 drumsticks, poor daddy only got 2. Even my nephew who just flat out hates eating likes this. The only con is that I end up eating too much. Oh and sometimes I don't have real ginger so I use ground ginger and the soy sauce bottle only contains about 15 oz so I use that instead of the 18 required. Thanks.

Blackened Chicken

This was so delicious. But I did smoke up my entire apartment, my dad thought I was burning down the house. But I will still make this again. I did only oil the breast but I think I have a cheap cast iron skillet. I also seared the chicken alittle longer and they baked for close to 40 mins at 375. Maybe they were just too thick. I was worried the inside may not have any flavor but that was not the case, this recipe made a flavorful and juicy breast. I think I will try this without the oil next time so this can be extra healthy.

Quick and Easy Alfredo Sauce

I have always made my Alfredo with cream cheese, so I thought I would try this recipe. I chopped fresh garlic and sauteed it in the butter, I also added some chopped green onion. I also cut the butter by 2 tbsp and did not use fresh Parmesan, bu tused the jarred type and this turned out great. Will be making this again.

Banana Crumb Muffins

The muffins were tasty, but I think I will do the 50/50 brown sugar white sugar mix next time. Now the topping was a disaster for me. Maybe my muffin tray was too small because the topping melted off to the sides even onto the bottom of my oven. The topping that did remain was very crispy almost burnt. I think I should have added it the last 5 mins of baking. I will try again though.

Carrot Cake III

I was not even a fan of carrot cake until I tried this. My sister mentioned carrot cake was her favorite cake so on her birthday I baked this for her and everyone loved it including me. This was really delicious. I am going to use anyone's birthday as an excuse to make this again.

Meatball Sandwich

Fabulous! Again the father in law did not care for this, but everyone else loved them. Cant always use fresh parsley of Parmesan cheese but it still tastes great. Only time consuming part was making the meatballs. But I make this at least once a month.
