Orange Baked Acorn Squash

This is similar to how I usually make acorn squash. Since I mash everything together in the end I do not mix the ingredients up separately before pouring it into the well (one less dish to clean). I just pour regular orange juice (not concentrate) right into the well then add a piece of butter, sprinkle in the brown sugar and the spice (I prefer just cinnamon). Give it a slight swirl with a chopstick and cook until soft. Pour off the liquid into a bowl, scoop out the flesh and mash together.

Chinese Sweet and Sour Chicken

This was very good. I added a little sesame oil because I like the flavor in chinese style dishes and a few drops of chinese hot oil to give it a little heat. Yummy!

Libby's® Pumpkin Roll with Cream Cheese Filling

This is one of my all time favorite desserts. Haven't met one person who doesn't rave about it and I've probably made several dozen of these over the years. For those who found it too dry or difficult to roll (cracked/crumbled) you have to be really carefull not to overbake it or it will get tough and/or the edges will get crispy and crack when you try to roll it. I double the spices because I like a lot of spice flavor.

Hot German Potato Salad III

This recipe was really good. It gets much better after standing for a few hours. The sauce was a little thicker than I expected so I thinned it a smidge with water. I think I will add a little less flour and a little less vinegar next time as the sour part slightly overwhelmed the sweet. More bacon crumbles too as these really add the salty kick to perk up the potatoes.
