Chicken Enchilada Casserole II

Per the recommendations of other reviewers, I cooked the chicken in diced tomatoes with green chilies and taco seasoning. I also used corn tortillas based on some reviews. I used fat free sour cream and 2% cheese as well. This was a big hit with adults and kids alike.

Rich Chocolate Frosting

This frosting was amazing! It was simple enough that my 4 year old mostly made it! We only added 1/4 C of milk and the consistency was perfect for icing a cake.

Apple Dip

I usually make peanut butter and cream cheese dip for apples and it's always a huge hit with everyone. I decided to change it up a bit with this one and the kids who loved the peanut butter dip chose this one over the peanut butter. The adults really liked both.

Stir-Fried Rice

This was so easy and surprisingly tasty for how quick and simple it was. We used some canned mushrooms instead of the frozen veggies since we were making a veggie stir-fry to go with it. It tastes great. Also, we used a little over 1 1/3 C water mixed with dry buillion since we didn't have canned. That turned out to be the right amount of moisture.

Broiled Tilapia Parmesan

My 4 year old and 20 month old who don't usually like fish very much gobbled up the whole tray and not much was left for the parents. I used fat free tub butter and fat free mayo and it was still wonderful.

Vanilla - Chocolate Powdered Sugar Frosting

This is slightly grainier than frosting made with shortening, but it's definitely worth it to avoid the trans fats! I doubled the recipe to cover 24 cupcakes and had about 1/2 recipe left over at the end. If I made it again, I would add a little salt to offset the sweet, but this is very yummy! My 4 year old said it was the best she'd ever had.

Groovie Smoothie

This was a hit with my husband and 3 year old. We didn't have strawberries, so I used half raspberries and half blueberries. Per another suggestion, we added some honey to sweeten it a little. I also added ground flax seed and cinnamon for nutrition and taste.

Turkey Manicotti

We liked this recipe and it's healthfulness is a great benefit, but I just couldn't classify it as "the best" to give it 5 stars. It's pretty easy to put together and the final taste depends a lot on the type of pasta sauce you use (at least that's what drove the taste for me).

Oven Fried Chicken III

I used chicken breasts cut into large chunks along with seasoned breadcrumbs. I added the other spices as suggested except I didn't have paprika and I cut the pepper in half (to 1/2 tsp). For us, it was still too much pepper, so next time I make this, I'll reduce it to 1/4 t. Per other suggestions, I cooked chicken breasts at 400 for 20 minutes and they were just right. I also used just 1/2 C of mayo mixed with a little milk to make it the right consistency for dipping the chicken pieces. With these changes, the recipe is excellent. The flavor is nice and the chicken is very moist. My 2 year-old liked it without dip (big accomplishment).

Spinach Marie

I'm not into cheese, but my husband really liked it. Unfortunately, my 2 year old was not fond of it even though the spinach was masked in a lot of cheese. I still give it 5 stars because I didn't expect her to like it - I was mainly making it for my husband.

Cherry Cream Crescents

I used 1/3 less fat cream cheese, reduced fat crescent rollw, and sugar-free pie filling. These were a big hit and very easy to make. There was probably enough filling left over for me to use another can of crescent rolls. I will definitely make these again soon!

Mandarin Orange Cake I

This was an excellent and super easy cake. My husband rated it a 4 instead of a 5 because he said, "I tend to like fruity pies and chocolate cakes" - otherwise, I would give it 5 stars - the recipe definitely deserves 5 stars for the ease in putting it together!

Old Fashioned Chocolate Cake

I made this recipe (cake only) with Splenda granular instead of sugar (and, as the Splenda site suggests for all cakes with Splenda, added 1/2 C of nonfat dry milk powder and 1/2 t baking soda for each C of Splenda used). This is the first chocolate cake that I have tried with Splenda that turned out well. If you substitute Splenda, reduce the cooking time by quite a bit and keep a check on it - Splenda cakes cook much faster than sugar cakes.

Margaret's Southern Chocolate Pie

I actually made a double recipe of this pie using Splenda instead of sugar and even the meringue turned out great. I think my Dad ate the pie in less than one day and then wanted the recipe. One thing I learned (and maybe it's just the case with Splenda substituted) is that using a nonstick skillet is much better than a saucepan. Even with me constantly stirring, it scorched on two different pans and then did great when I finally moved to the nonstick pan. One note: If you are subbing Splenda for sugar, you may wish to reduce the Splenda amount slightly from what is called for in sugar quantity - Splenda tends to turn out a little sweeter than sugar. Great recipe - Thanks!
