Low Fat Breakfast Cookies

Reviewed: Feb. 11, 2014
Very tasty! We followed the recipe exactly except we used dark chocolate chips. I had considering cutting back on the amount of dried cranberries, but I'm so glad I left the full amount in.

Best Spanish Rice

Reviewed: Jul. 27, 2013
This is really good rice - and I don't even like rice! My only mistake was keeping the temperature too high after I added the broth and salsa - it looked like way too much liquid to be absorbed when I first added it, so if it looks like way too much liquid to you, still lower the temperature - it will absorb and turn out great.

Strawberry Angel Food Dessert

Reviewed: Jun. 28, 2013
Very tasty! I also reduced the sugar in the cool whip portion to 2/3 C and prepared my own strawberry glaze. I will definitely make this again!

Baked Ziti II

Reviewed: Dec. 18, 2012
The kids say it's better than lasagna (and it's much easier). I added a bag of chopped broccoli to add nutrition and therefore added a little extra pasta sauce. Fat free cottage cheese worked fine in the place of the ricotta.

Six Can Chicken Tortilla Soup

Reviewed: Oct. 28, 2012
I made this soup exactly to the recipe except that I added cooked frozen spinach instead of the corn (we didn't have any). Even if we had corn, I would definitely add the spinach in again next time. Even with mild tomatoes and chilis, it is still pretty spicy for us, so I served the kids' portions on top of rice and sprinkled cheese on top. All three said they "love" it. Rather than rice, I crushed tortilla chips on top of mine and that made it outstanding.

Chicken Enchilada Casserole II

Reviewed: May 29, 2012
Per the recommendations of other reviewers, I cooked the chicken in diced tomatoes with green chilies and taco seasoning. I also used corn tortillas based on some reviews. I used fat free sour cream and 2% cheese as well. This was a big hit with adults and kids alike.

Rich Chocolate Frosting

Reviewed: Apr. 25, 2012
This frosting was amazing! It was simple enough that my 4 year old mostly made it! We only added 1/4 C of milk and the consistency was perfect for icing a cake.

Apple Dip

Reviewed: Feb. 5, 2012
I usually make peanut butter and cream cheese dip for apples and it's always a huge hit with everyone. I decided to change it up a bit with this one and the kids who loved the peanut butter dip chose this one over the peanut butter. The adults really liked both.

Chinese Chicken Fried Rice II

This is good, but I enjoyed one I found with much less fat better.

Broccoli Cheese Soup

I only used 2 tsp of garlic and 1/4 C butter. I had a 6, 4, and 2 year old begging for bites. Yummy!

Really GOOD Frosting!!!

Reviewed: Aug. 30, 2011
Very good and very easy. For cupcakes, I didn't come close to using all the milk in the recipe.

Stir-Fried Rice

Reviewed: May 9, 2009
This was so easy and surprisingly tasty for how quick and simple it was. We used some canned mushrooms instead of the frozen veggies since we were making a veggie stir-fry to go with it. It tastes great. Also, we used a little over 1 1/3 C water mixed with dry buillion since we didn't have canned. That turned out to be the right amount of moisture.

Broiled Tilapia Parmesan

Reviewed: May 5, 2009
My 4 year old and 20 month old who don't usually like fish very much gobbled up the whole tray and not much was left for the parents. I used fat free tub butter and fat free mayo and it was still wonderful.

Vanilla - Chocolate Powdered Sugar Frosting

Reviewed: Dec. 10, 2008
This is slightly grainier than frosting made with shortening, but it's definitely worth it to avoid the trans fats! I doubled the recipe to cover 24 cupcakes and had about 1/2 recipe left over at the end. If I made it again, I would add a little salt to offset the sweet, but this is very yummy! My 4 year old said it was the best she'd ever had.

Groovie Smoothie

Reviewed: Jul. 27, 2008
This was a hit with my husband and 3 year old. We didn't have strawberries, so I used half raspberries and half blueberries. Per another suggestion, we added some honey to sweeten it a little. I also added ground flax seed and cinnamon for nutrition and taste.

Thanks to the reviewer who suggested using half the recommended amount of brown sugar - it was just right. This is a great and addictive dip!

Candied Carrots

Reviewed: Jul. 19, 2007
We don't usually like cooked carrots (we prefer raw), but this was a good recipe. I used mostly fat free butter and a little less brown sugar than the recipe called for.

Turkey Manicotti

Reviewed: Apr. 30, 2007
We liked this recipe and it's healthfulness is a great benefit, but I just couldn't classify it as "the best" to give it 5 stars. It's pretty easy to put together and the final taste depends a lot on the type of pasta sauce you use (at least that's what drove the taste for me).

Oven Fried Chicken III

Reviewed: Apr. 16, 2007
I used chicken breasts cut into large chunks along with seasoned breadcrumbs. I added the other spices as suggested except I didn't have paprika and I cut the pepper in half (to 1/2 tsp). For us, it was still too much pepper, so next time I make this, I'll reduce it to 1/4 t. Per other suggestions, I cooked chicken breasts at 400 for 20 minutes and they were just right. I also used just 1/2 C of mayo mixed with a little milk to make it the right consistency for dipping the chicken pieces. With these changes, the recipe is excellent. The flavor is nice and the chicken is very moist. My 2 year-old liked it without dip (big accomplishment).

Too Much Chocolate Cake

Reviewed: Apr. 6, 2007
This cake was great. I used regular sized chocolate chips and made the 1/2 C oil, 1/3 C milk substitution for 1 C oil as suggested by other reviewers.
