Vegan Red Lentil Soup

This is a great recipe! I doubled it, quadrupled the water (should have gone 1 cup shy though), tripled the curry powder, left out the tomato paste (didn't have any), added a bit of cinnamon. Also added some chopped kale at the end. Tastes just like indian dal.

Lentil Soup

Took some others' suggestions, I used more carrots (5 I think), no celery (don't tolerate it well), more garlic (probably 4-ish cloves), less oil (just enough to coat the bottom of my pot), 1 26 oz boxed chopped tomatoes (bpa-free!), doubled the basil and oregano, added a tsp of cumin, added extra veggies (couple each potato and sm. zucchini), used bouillon enough for one of the quarts of water, and added 4 tsp of balsamic vinegar at the end. Excellent!
