Rosemary Ranch Chicken Kabobs

These were amazing!! We ate it with a salad and pita bread/hummus. I made a couple of changes just because I didn't have some of the ingredients...I used soy sauce instead of Worcestershire, Balsalmic vinegar instead of white vinegar, and a greek feta dressing instead of ranch, and dried rosemary instead of fresh. We also cooked it on our Foreman grill. I am sure the regular recipe is equally amazing, my only recommendation is to keep some of the sauce before mixing in the chicken...it would be great to top the chicken with some of that after cooking it.

Banana Crumb Muffins

These were amazing!!! I used an extra banana and got the 12 good sized muffins perfectly, and they came out so moist and sweet :) Added some walnuts and extra cinnamon/nutmeg as others had suggested, and was not disappointed. Hubby and I approve :)

Cottage Cheese Chicken Enchiladas

Creamy Chocolate Frosting

I am a huge fan of frosting...it's the best part of the cupcake in my opinion, and this was awesome!! I made birthday cupcakes for my little brother, Dirt and Worm style (since hist birthday is in October :) ) I just crumbled oreos and dumped them on top of the fresh frosting, and topped it with a gummy worm. They were super cute and very delicious :)

Chicken Tortilla Soup I

This soup was amazing!! I made a few changes to the recipe, but for my husband and I, it was for the better :) We added a can of enchilada sauce, used carrots instead of corn/hominy, added about a half of a can of evaporated milk to make it a little creamy, and some cayenne pepper to give it a kick...turned out awesome!!!

Outrageous Chocolate Chip Cookies

These cookies were outrageously yummy! The only change i made was i used vanilla granola instead of oats (because I realized I was out of oats) and they turned out beautifully. I also used crunchy peanut butter...loved the bits of peanut in there with the chocolate :)

Shepherd's Pie

This was really tasty! I changed the recipe up a little. I used 3 potatoes, used half the meat and instead added some sauteed onions, broccoli, and celery to the meat mixture, and baked it in a 9x9 square pan, and it turned out well. It only cost us about $10 to make and it fed us both with more than enough leftover for lunch.
