Greek Lemon Chicken Soup
This is a very good soup if you follow the suggestions posted by the reviewers. I did just that and it made a wonderful meal for my family. I didn't use the soup base, but I did add more rice and chicken. I also used less lemon and seasoned the soup with a lemon pepper blend to round out the flavor. Next time I make this satisfying soup, I will use less egg (4 eggs could work well) and I might add more carrots/celery/onion. Another note, I am used to heating the roux and mirepoix, then adding the stock and heating to a boil (not heating the stock/mirepoix, then adding flour and butter later). This is how I prepared my soup and i had great results!
