No Roll Pie Crust I

I will never make a pie crust with unhealthy shortening again. I use canola oil for a heart-healthier crust. Roll this between two sheets of waxed paper. Couldn't be easier.

Baked Ziti IV

Makes a lot of food. Made in two 9x9 inch baking dishes and froze one. (Do not bake before freezing). Thaw completely in fridge then bake as directed. Very tasty.

Southern Baked Yellow Squash

Very good. However, squash has so much water in it already, I would never dilute the flavor by boiling. Simply saute the onions in the butter, add the squash, put a lid on it until its own liquid is released and continue simmering until desired tenderness.

Jo's Rosemary Bread

This bread is wonderful. However, being a health nut, I feel guilty eating "white" bread; so I added 2 tablespoons of milled flax seed to ease the guilt. It doesn't change the taste, and adds omega 3. I use the dough setting on my breadmachine and shape into a round loaf. Let rise til doubled and bake 375 for 30 minutes.

Pecan Pie V

I just went through my recipe box and tossed out all my Karo based pecan pie recipes because I haven't used them since I discovered this recipe. Perfect, just like it is. (I use the "no roll pie crust I" recipe with it.) Easy as pie!

Honey Of An Oatmeal Bread

These make wonderful rolls. Use dough setting on machine. When cycle is done, place dough on lightly flourered surface. Punch down to remove air. Shape into 15 round rolls (knead in slightly more flour if too sticky). Arrange in 9x12 lightly greased glass pan. Cover lightly with greased plastic wrap. Let rise in warm place until doubled (about an hour). Remove plastic. Bake 375 degrees for 15-18 minutes or until lightly browned. Turn out onto rack.

Cajun Chicken and Sausage Gumbo

I love this recipe, but hate all the stirring, so I went out and spent $9.99 on a Robo Stir just so I could make this recipe more often! (I use it for the first 8-10 min. of stirring).

Salsa Chicken

This has been a standby favorite for several years. I give it five stars for it's simplicity and versatility. Use your favorite seasoning mix (I use Taco Seasoning I recipe), your favorite salsa, and your choice of cheese.

Steakhouse Wheat Bread for the Bread Machine

Very good just as written. Note: if you add 3 tablespoons of soy flour to the measuring cup before adding the bread flour, the baked bread will stay fresh longer (this also adds extra nutrition). However, soy flour smells funny, so don't be alarmed. Once baked, it will smell delicious just like bread should.

Best Big, Fat, Chewy Chocolate Chip Cookie

Still haven't discovered a homemade chocolate chip cookie I like better! On a scale of 1-10 my son gave them a 12. Update: This is one of the few recipes that I don't alter in any way, shape, or form. Perfect just the way it is. (People even offered me money to whip them up a batch).

Absolutely Ultimate Potato Soup

I halved the tarragon and so glad I did, otherwise I would have given this an extra star. Also, I didn't see the need to thicken this with flour. After smoothing half the soup with my puree stick, the consistency was perfect. (this cost an extra star). This could easily be a 5 star recipe and is definitely a keeper!

Garlic Dill New Potatoes

I rated this by following the recipe exactly. This could be a five star recipe if tweaked. I love the fact that the potatoes are steamed. I'm sure the potatoes retain a lot more vitamins that way, which is always a plus in my book.

These are tasty just the way they are. However, being health conscious, I substituted 2 tablespoons of the flour with 2 tablespoons of flax seed meal. Doesn't change the taste at all.
