So Good for You Buckwheat Pancakes

Leftover pancakes can be placed in a single layer on a baking sheet and placed in freezer. When frozen, remove from sheet and place in a freezer bag. Place pancake on microwave safe plate and heat in microwave for a quick nutritious breakfast.

Lentil Soup

Good soup made according to directions. The chicken stock would make it off limits to vegetarians, but would improve flavor, I'm sure. I served it with Honey of an Oatmeal Bread found on this website.

Egg Noodles

There were very good. All I had in the house was soy milk, and they turned out yummy. These reminded me of my Pennsylvania Dutch grandmother's egg noodles. She simmered hers in chicken stock and cooked them until almost all the stock was reduced. Now if I can just get the ratio right.

Steakhouse Wheat Bread for the Bread Machine

Very good just as written. Note: if you add 3 tablespoons of soy flour to the measuring cup before adding the bread flour, the baked bread will stay fresh longer (this also adds extra nutrition). However, soy flour smells funny, so don't be alarmed. Once baked, it will smell delicious just like bread should.

Absolutely Ultimate Potato Soup

I halved the tarragon and so glad I did, otherwise I would have given this an extra star. Also, I didn't see the need to thicken this with flour. After smoothing half the soup with my puree stick, the consistency was perfect. (this cost an extra star). This could easily be a 5 star recipe and is definitely a keeper!

Decadent Hot Fudgy Sauce

I always have a half pint canning jar of this sauce in the fridge available to serve over ice cream for a quick dessert when I have unexpected guests (or when I have a serious chocolate urge).

Garlic Dill New Potatoes

I rated this by following the recipe exactly. This could be a five star recipe if tweaked. I love the fact that the potatoes are steamed. I'm sure the potatoes retain a lot more vitamins that way, which is always a plus in my book.

Southern Baked Yellow Squash

Very good. However, squash has so much water in it already, I would never dilute the flavor by boiling. Simply saute the onions in the butter, add the squash, put a lid on it until its own liquid is released and continue simmering until desired tenderness.

These are tasty just the way they are. However, being health conscious, I substituted 2 tablespoons of the flour with 2 tablespoons of flax seed meal. Doesn't change the taste at all.

Simple Stir Fry

If this recipe had a different name such as "Chicken and Vegetables in Gravy" and wasn't so salty, I would have given it a better rating. This is good served over rice. Again, cut back on the garlic salt and seasoning salt and/or use low sodium soup.

Easiest Chicken Cacciatore

To make this extra easy, I triple (or more) the marjoram, sugar, garlic powder, pepper, and thyme and store it in a container. Then when needed, I add 1/2 Tablespoon of the mixture to the sauce instead of measuring individual herbs/seasonings.

To Die For Blueberry Muffins

I hate to be a spoil sport, but I could taste the baking powder in these. Otherwise, I would have given it 5 stars. They were beautiful and came cleanly out of the muffin tin.
