Low-Fat Blueberry Bran Muffins

I think these muffins are excellent. I have a batch in the oven as we speak. In fact I make these so often that I keep four premixed containers of dry ingredients on hand to cut down on the prep time later. Thank you for the great recipe!

Squash and Apple Soup

I'm giving this recipe 5 stars even though I’ve never made it. This afternoon I was cooking my leftover butternut squash on the stove with onion, carrots, and chicken broth. As it was simmering, I browsed through other recipes that contained butternut squash and found this one. The next thing I knew I was adding apples, ginger, and a pear I had kicking around! I adjusted the liquid with some h20 and seasoned it with salt pepper and sage, let it cook down and pureed it. It was absolutely delicious. Thank you for the idea of adding fruit. I’m excited to see what else I can throw in.

Creamy Chicken Turnovers

I’m giving this recipe 5 stars for the idea alone. I changed the ingredients somewhat to make it taste more like a traditional chicken pot pie and it was WONDERFUL. Here’s what I used: 3 cups cooked, chicken (I boiled boneless skinless breasts) 1 ½ cups crushed Ritz crackers 3/4 cup cream of chicken soup salt and pepper to taste 2 refrigerated prerolled pie crusts 1 cup diced carrots cooked until somewhat firm I combined the mixture as original recipe stated. The only difference in the rest of the preparation is that I used 2 crusts both cut in half, spooned in mixture, and folded crusts into a pocket. Makes 4 large turnovers. I love this recipe!

Pollo Fajitas

This is the only way I make fajitas. At times I make extra sauce by doubling the Worcestershire sauce, vinegar, soy sauce, chili powder, and lemon in a separate pot so it can be served with any left overs over rice the next day.

Joey's Peanut Butter Cookies

My husband loves these cookies. I make a batch twice a week at least. I guess I should have given the recipe four stars because I've only ever made them using light peanut butter so I'm not exactly sure what the original recipe is like, although I'm sure it’s great. The next time I make them I'm going to use toffee chips.

Chicken Crunch

I could eat this every day! I used mushroom soup, added more chicken, and omitted the sour cream. I think this would be great with toasted almonds on top. Loved it!

No Bake Cheesecake I

I LOVE this cheesecake! I used light cream cheese, folded in 1 quart of blueberries, and used 2 cups of crushed honey maid honey graham sticks instead of the graham cracker crumbs and pecan sandies cookies. It was delicious and looked beautiful as well.
