I upped the oats the 3 cups, used whole wheat flour instead of white, used only 1/3 cup oil, added 1 cup apple sauce, used closer to 1.5 tsp salt, added craisins and almonds and 1/4 tsp almond extract. I also used 1 tbsp cinnamon and then quite a bit of pumpkin pie spice (to taste) because I love it! Baked for about 20 min, then sprinkled with salt/brown sugar and topped with a bit of butter spray, then broiled for just a min or so. . . until golden brown. Watch it closely or it will burn!
Soo good! It seems pretty flexible too. . . I'll definitely try this again and again with peanut butter, coconut, pecans, mashed bananas, pumpkin puree, different spices, etc. . . Thanks for an awesome recipe! :)
