Tomato-Cream Sauce for Pasta

Pretty good! I added sauteed mushrooms and a bit more garlic, salt, and sugar. I also pureed it. Next time I'll puree a little less (it wasn't chunky enough), use FRESH herbs, add more veggies (spinach?) and maybe add a bit more cream and/or parmesan cheese. Maybe pureeing in a little cottage cheese would be good:) Overall, great tomato sauce recipe! I suggest doubling it and freezing the left overs.

Homemade Black Bean Veggie Burgers

Delicious! -replaced bell pepper w/ corn -rinsed beans and sautéed onion -pat dried beans, corn, and onion really well -2 eggs -2 tsp chili powder -left out hot sauce -added 1/4 cup quick oats -chilled mixture, shaped into patties, froze extas I baked them in the oven as directed and served w/ rice and BBQ ranch sauce. So good! Can't wait to have as an actually burger! Will also try crumbled as burrito filling. (try w/ mushrooms!)

Too Much Chocolate Cake

It was really good, but it honestly didn't taste much different from a straight out of the box cake. . . And I made just as directed. So why go to the extra effort to add all the special ingredients? Next time I want a delicious dessert, I'll go for the homemade version.

Zucchini Yogurt Multigrain Muffins

Really good! but also a lot of ingredients/work. . . I left out the nuts and raisins but otherwise made the recipe pretty much as written. A few minor adaptations: almost all wheat flour decrease to 1/2 cup sugar decreased to 1/2 cup honey old fashioned oats (instead of oat flour) increased to 1 cup zucchini If I made these again, I'd increase the spices and vanilla a bit and add more shredded zucchini and carrots. *Or substitute chopped apples for the veggies! Or experiment with flavored yogurts and fruit (no veggies). Overall, delicious and moist:)

Light Wheat Rolls

They were a bit too light and bland for me. . . Perhaps they just need a tad more salt and/or sugar. Not bad, but not worth all the effort/rising time. . . I've had much better.

Cream of Sweet Potato Soup

So delicious! I used half&half but otherwise I followed the recipe exactly as is. I didn't like the cayenne so I might leave that out or just add one dash next time. . . Overall, very easy and healthy! Thanks!:)

Beef Taco Skillet

Really good! I'd say 4.5 stars. . I added a bit of minced garlic, taco seasoning, salt & pepper, and corn. . . besides that I followed the recipes, using both variations. (sour cream, mexican blend cheese, and corn tortillas.) Simple and delicious! :)

Yummy Sweet Potato Casserole

So good! Follow the advise on Melissa's review and it will turn out fantastic! Be careful on the sugar though. . . I halved it and (due to some VERY sweet baked sweet potatoes) it still tasted as sugary as a dessert.

Broiled Tilapia Parmesan

Grandmother's Buttermilk Cornbread

Really good! Didn't change a thing and it was great:) I only gave it 4 stars though because I know I've had better before. I can't quite put my finger on it, but I don't think it was quite as moist or flavorful as I hoped it would be. (Which is crazy considering all the butter and sugar in this!) I guess I just like a stronger honey taste in my cornbread better. . .

Delightful Apple Spice Muffins

So good! I used brown sugar instead of white, 1/2 cup whole wheat flour, 1/2 cup white flour, 1 cup oats, a little over 1 cup applesauce, a tsp vanilla, a bit of salt, and a lot more spices! Oh and I added chopped apples! Soo delicious! perfect for fall :)

Playgroup Granola Bars

Yum! I upped the oats the 3 cups, used whole wheat flour instead of white, used only 1/3 cup oil, added 1 cup apple sauce, used closer to 1.5 tsp salt, added craisins and almonds and 1/4 tsp almond extract. I also used 1 tbsp cinnamon and then quite a bit of pumpkin pie spice (to taste) because I love it! Baked for about 20 min, then sprinkled with salt/brown sugar and topped with a bit of butter spray, then broiled for just a min or so. . . until golden brown. Watch it closely or it will burn! Soo good! It seems pretty flexible too. . . I'll definitely try this again and again with peanut butter, coconut, pecans, mashed bananas, pumpkin puree, different spices, etc. . . Thanks for an awesome recipe! :)

Amy's Barbecue Chicken Salad

Yummy! A great way to use up leftover BBQ chicken! I used tortillas chips instead of fried onions and it was delicious :) Next time I'll add only 1/4-1/3 cup of bbq sauce to the ranch as the bbq taste was a bit strong. Overall, a great light summer recipe! Thanks!

Mom's Zucchini Bread

Yum! Nice and moist :) To make it a bit healthier, I used 2 cups whole wheat flour and 1 cup ap flour, subbed 1/2 cup applesauce for 1/2 cup of the oil, used 1 cup brown sugar and 1 cup white sugar, increased the shredded zucchini to 4 cups(lightly packed), decreased the cinnamon to 2 tsp, and added 2 tsp of pumpkin pie spice! I also left out the nuts. The top was a bit too moist, so next time I'll make sure my baking soda and powder aren't too old (as I heard that can contribute to the problem), and will be sure not to over-mix the wet and dry ingredients. I think it's best to mix the wet ingredients well with a electric mixer and then stir together the wet and dry by hand. Overall, a great recipe! LOTS of flavor! I think I could even use all applesauce and reduce the sugar by another 1/2 cup and it would still be great! Thanks for an awesome recipe!

Donut Muffins

Yummm! Yep, they taste just like little donut holes! I love the nutmeg! The only changes I made was to add a dash or two of cinnamon and salt to the batter, and to add a bit of nutmeg and salt to the cinnamon sugar coating. I love how just a little dash of salt really brings out the flavor. I also used half whole wheat flour. In the future, unless I'm making these for a dessert (since that really is what they taste like), I'll skip the butter coating and just dip the tops in the cinnamon sugar. It sticks perfectly fine without the butter and tastes plenty sweet and savory! These really are amazing! I can't wait to have them on cold winter mornings with a steaming cup of cocoa! Thanks! :)

Really good! I doubled the shortening and the salt and the water too. I also used half whole wheat flour. This only made about 4 normal size tortillas, though, so double or triple for a larger group. Delicious and so easy!

Southwestern Chicken and White Bean Soup

Delicious and healthy! And easy :) As with most soups, the quantities are pretty flexible. . . I just kind of added more of this or that till it tasted right and had the right amount of liquids and solids, etc. So I ended up doubling the broth, the salsa, and the garlic. I also used 2 cans of chicken instead of frozen. I sauteed the onions and garlic together and browned the chicken with it before adding it to the crockpot. I reduced the cumin a bit and also added about a tsp of chili powder, a Tbsp or so of brown sugar, half a can of green chiles, pepper, and onion salt. Next time I'll add canned diced tomatoes and more sauteed onion. Serve with sour cream, grated mozzerella cheese, fresh cilantro, and chips! It's basically taco soup without the rice :) Yum!
