Hot 'n' Spicy Buffalo Chicken Salad

Gotta love it! I added chopped celery, tomato, and cucumber as well as a sprinkling of cheddar cheese. Way fabulous . . . Thanks for sharing!

Lamb Chops with Balsamic Reduction

We thoroughly enjoyed this! The rub is fantastic and gave real depth of flavor to the chops. I let the reduction get quite syrupy and then added the juices from the resting chops. The reduction over mashed potatoes was fabulous! This will be a keeper!

Foolproof Rib Roast

Unbelievable! This was the best Christmas roast ever! The only change I made was mixing the salt, pepper, and garlic powder with about 2 Tblsp. olive oil before rubbing it on the roast. I also used recipes for Herbed New Potatoes and Orange Glazed Carrots which did not require oven time, since the oven is out of commission for the entire 5 hours before dinner. Well worth it, though! Absolutely amazing roast!

The Best Thai Coconut Soup

I've made this several times, following the recipe exactly. When I made it today, I used Lite coconut milk, just to cut down on the fat a bit. We were not disappointed. The flavor was excellent, and the slightly thinner broth still packed a solid flavor punch! This is one of our favorite soups.

Wilted Spinach with Cherries and Goat Cheese

This was quite an elegant, sophisticated recipe with an fabulous blend of flavors and textures. It came together quickly while my tenderloin rested. I followed the recipe exactly and probably won't change much next time. I'm thinking of adding pinenuts just for fun!

Creamy Pepper Dressing

Really quick and easy! I have made this several times and varied the herbs and seasonings at my whim. It is excellent as printed, although I prefer slightly less vinegar, maybe 1 1/2 teaspoons. Another time I added fresh dill, freshly chopped garlic, and fresh snipped parsley along with the basic sour cream, mayo, milk, and vinegar recipe. This is a nice basic creamy dressing recipe.

Corn Casserole I

I prepared this recipe for a celabratory dinner for my mom's 77th birthday. Even my picky, don't-care-for-vegetable siblings asked for seconds! The only variant to the original is that I added a few light sprinkles of cayenne pepper before spooning into the casserole. It was just the right amount of zip for my spice-loving family! This recipe has already been given the family's approval to add to our traditional Thanksgiving menu. Bravo, Polly!

Oven Roasted Potatoes

These are terrific potatoes! Even my 13-year old whose diet consists mainly of Mountain Dew and Doritos loved them! I added a bit more oil and 2 tablespoons of dry grated parmesan cheese to the herb mixture. I'll use this one often!
