Cocoa Banana Bars

Amazing. I always have too many bananas and was getting sick of making banana bread all the time. This was quicker and tastier. I even thought I had screwed these up by overmixing the two batters together, but they still turned out delicious. Just baked them until a toothpick came out clean. After they cooled completely I put half in the freezer to prevent me from inhaling them all over a few days. Will definitely make again.

Poppy Seed Bread III

Amazing! I never use the glaze and this loaf gets rave reviews every time! One thing I do play with: each time I've added just a tablespoon of Cointreau. Never tried it without it, and never tried it with the butter flavouring (I skip it) -- but WOW it's delicious :) Will certainly make it again and again.

Absolutely Amazing Ahi

Excellent! I'm sure there's a technique to cutting the tuna that I'm unaware of, and will look more into that. Also, don't be fooled, this is very rich! I wanted to have it for dinner and was totally full after a small portion! Tip: don't us regular soy sauce! Kikkoman regular soy sauce will ruin this dish; I picked up a bottle of Kikkoman Premium Soy Sauce for Sushi/Sashimi. The sodium content is only slightly less, but for some reason this sauce makes all the difference!

Chocolate Banana Bread

Delicious! I agree that the banana comes through nicely but subtly, and I only used the 6 bananas. I also used a bundt pan but at 350F, my bread was just slightly overcooked at 60 minutes, but slightly undercooked at 45. So start checking at 45 minutes! It smelled so amazing that I didn't let it cool long enough before trying to get it out of the pan, so it broke in half, but that was my bad! However, having the hot gooey chocolate banana mess in a bowl was amazing, and if I weren't lactose intolerant I would have put a little vanilla ice cream on top and been in heaven! I froze half of the bundt to keep myself from devouring the whole thing in 4 days or something ;) Will let you know how it defrosts!

Oatmeal Chocolate Chip Cookies I

Just made this recipe tonight, and these cookies are absolutely delicious! I did change the recipe a little because I didn't have shortening (and, to be frank, shortening kind of grosses me out), so I used softened salted butter instead, but I kept the other salt measurement (I don't mind my sweets a little salty... salt + chocolate = yum!). I also added about a tsp of vanilla. Baked at 350 for just a flash over 10 minutes and they're perfect. Chewy with crisp edges, and not flat. Yum!

Lemon Poppy Seed Loaf

This is delicious! Perfect! I changed the recipe a little to make it healthier: I only used 1/4 cup of butter and I used half a cup of apple sauce instead; I also used 1.5 cups self-rising flour and 1.5 cups wheat flour; 1.5 cups brown sugar instead of 2 cups of white sugar and I used a full cup of yogurt. I also used fresh lemon juice and rind -- not bottled lemon juice. I found that 2 medium sized lemons provided exactly the right amount of juice AND rind. I have no complaints about the lemon flavour -- it's just the right strength in my opinion. I like a present but subtle lemon flavour-- not too tart or overpowering. Baked it for 50 minutes -- it was quite dark on the outside (not burnt at all, though, just very golden), but I checked it at 40 and 45 minutes and it wasn't ready yet. Will definitely make this one again and again!

German Apple Cake I

Excellent and delicious cake. To stick to my new year's resolutions (somewhat) I substituted apple sauce for the oil (entirely) and used 1 cup wheat flour and 1 cup self-rising flour. I also cut down the sugar to 1 1/4 cups and used brown sugar instead. Baked it for about 50 minutes in a bundt pan (my oven is a little on the hot side) and it turned out perfectly; moist, flavourful, and totally delicious. I served it with vanilla tea. Amazing! Will definitely make again and again.

Peanut Butter Drops

I just made these -- I have the last batch in the oven right now. I tasted the ones that have cooled and they are moist and delicious! I made them on a whim because I had very few ingredients (I, too, substituted the shortening for 1/2 cup butter and 1/2 cup oil... great tip, thanks!), but I had an extra zucchini lying around from a veggie lasagna I made earlier. They'll make a great late night snack later on :)

Lamb Chops with Balsamic Reduction

I was amazed at how flavorful and delicious this dish was! And so easy! It's not obvious, but I sat there with my boyfriend grinning: this is the kind of thing you'd spend a fortune on at a five star restaurant. The only thing was that it took forever to cook the lamb! Don't know what I did wrong, there. But it was totally worth the wait.

Lisa's Chocolate Chocolate Chip Cake

I made this cake both as a traditional 2 layer cake (adjust cooking time accordingly) frosted with Rick's Buttercream Frosting (for birthdays), and I also have made it as a bundt cake, with confectioner's sugar spinkled on the top with bright red strawberries in the center. Every time I make it, it's a hit! It's my favorite cake for pretty much any occasion.

Hearty Vegetable Lasagna

I'm not a vegetarian, but just cooked this for my mom for dinner tonight and we both had 2nd helpings.. which never happens!! It was light tasting, but filling, and totally pleasant all the way through! This might very well be my new lasagna recipe :) Yum!

Banana Banana Bread

This is the BEST banana bread ever!! My family is addicted! Everyone keeps asking me to make loaves for them to freeze and keep for their lunches. The thing they don't get is, it's SUPER easy! It's a 5 minute job if you don't count baking time. This is my favorite banana bread. Sometimes, I even add more banana!

Delicious! I'm going to make some more later this week to bring up to the cottage for Canadian Thanksgiving weekend with my family :) Give it all the time it needs to cook, otherwise it'll have gross mushy insides (I messed up my first loaf).

Ham and Cheese Picnic Bread

I made this for m ex-boyfriend to bring along on a cold winter camping trip. It's very filling and kept him going in the cold. And it's delicious! We're not together anymore but he still asks me to make it for him when he goes backpack hiking :)

Good Old Fashioned Pancakes

Wow!! I can cook all kinds of things very well, but for some reason, I'm notorious for screwing up pancakes- I always make them too dry and flavorless. Well, this is now my fool-proof recipe, it's delicious, everyone loved it! I think the difference is the melted butter in the mix. I also added a bit of extra milk cause it was a little too thick at first.
