Mango Jam

Fantastic way to use up extra mango. I cut the sugar in half; still found this incredibly sweet. Squeezed a lime and a lemon into the mix and that made it a 4 star spread.

Sukhothai Pad Thai

Thought this was a pretty good alternative to very sweet somewhat authentic pad thai. Second go reduced sugar by 1/2, used peanut oil not veg, 2TBSP rice vinegar and 2TBSP fresh lime with pinch of zest, cut the soya to half & added 2 TBSP fish sauce and tamarind sauce (couldn't find pulp, used 2TBSP as called for) included some shredded cabbage slaw and onions to the garlic, fresh cilantro and lastly sweet chili sauce instead of paprika. This made it a 4.5*

Black Magic Cake

it is important to use a good cocoa in this recipe, not the chemically separated standard grocery shelf . I replaced the buttermilk with greek yoghurt (cut with a drop of milk) one the second batch and this was a 5.

Key Lime Pie VII

Only problem with this pie is I had to eat the entire thing in two sittings .....addictive ..... Second round I used 1 can condensed milk, doubled the lime and sour cream (I like it tart, as written I found it way too sweet)and with the adjustment I ate it in 1 sitting ....

Pesto Cream Sauce

Burger or Hot Dog Buns

Best buns ever! I gave it a 4 on this fast version. The second time I let it sit overnight before baking ... and 5 star status buns came out of the oven. Definitely a keeper ...

Italian Spaghetti Sauce with Meatballs

Good base recipe; i'd have given it 4 but found it salty; omitted salt on the second go. I made this two ways the first time .. one batch I added the meatballs to cook in the sauce directly and for the other batch baked the balls in the oven @ 350 for 40 or so minutes.. I liked the baked meatballs better - they caramelized adding more flavor. Second time around 1/2 pork 1/2 beef mix; added a pinch of crushed chili ppr to the meatball mix; omitted salt; reduced sugar to 1/4 tsp and fresh basil to the sauce.. fantastic - will stick with renewed version for a five star meal.

Black Pepper Beef and Cabbage Stir Fry

I did like this recipe but found it lackluster ... Second Round: added a TBSP of fish sauce to the meat (1/2 ground Pork 1/2 beef) before frying ... added 1/2 tsp ginger with garlic after browning meat and instead of water broth. A hit of sriracha at the end and that brought the rating up to 4.5 and made it a keeper ...

Coconut Shrimp I

These shrimp are fantastic; addicted! I rolled half my shrimp in panko for the "coconut is for dessert" crowd those were yummy too but the coconut ones, I could have eaten 1,001 ....

Pesto Pizza

Good way to use up an abundant basil & tomato crop ... Used the "easy pesto" from this site (lowered the sodium) & fresh black olives (never from a can). Put these ingredients onto a pita and baked at 425 for 20 minutes - let stand 5 minutes to cool and this was a five. I've rated it a 4 as written.

Shrimp Tacos

First time 5 star; second time with a small change 7 star; good stuff. My mango was a little sour so I added 2 tblspns honey to it instead of the shrimp. I blackened the shrimp to cut the sweetness and this was fantastic.

Bumper crop of zucchini this year ... looking for things to do with it all. I would have given ths 5 stars but the sugar was just way out there ... I reduced my second batch to 1 cup and it was still quite sweet. Otherwise a great recipe.

Winter Fruit Salad with Lemon Poppyseed Dressing

A good dressing base - I dropped the sugar to 1/8 of a cup and added 1/8 cup of honey and hand blended with 1/2 small onion; Still sweet but nice. everyone into the pool .. I added feta, pecans and strawberries to the mix and this was great ..

Best Marinara Sauce Yet

Would have given this 5 stars; I always under salt in recipes (unless baking) and did so here but still found it salty. I omitted it next batch and added garden fresh oregano and basil for flavor. Fantastic base; I was taste testing with shotglasses nevermind a spoon .... round three - less salt, a pinch of sugar and blamo this is a 5 star keeper

Green Bean Stir-Fry

I stole this sauce recipe; added a garlic pwdr & chili's rather than raw garlic. Subbed blanched Chinese long beans, stir fried with onion, dry roasted peanuts and garlic with this sauce over top ... yum, this was good. May just add as a new recipe since I can never find anything to do with Chinese long beans on here .. thanks for the inspiration

Asian Salmon

I really liked this and you can adjust the brown sugar to taste ... made exactly as recipe listed except didn't allow to marinade, Whipped it up and straight into the oven and served with the "yummy Bok choy salad" from this site with a little bit of left over rice.
