Reuben Hot Dish

Reviewed: Jul. 26, 2002
This was a very different casserol. I prefer a lot more rye bread that the original, so I cubed about 7 pieces of bread and rather than crush, I left them cubed. But otherwise, very easy to follow and nice for a change. KMAN

Three Ingredient Peanut Butter Cookies

Reviewed: Jan. 23, 2003
A friend of mine is allergic to flour so I was looking for a gluten free recipee. This was perfect. The cookies were delicious and my friend called back and asked for the recipee. I also tried them a second time using Splenda sweetner in place of sugar and they were still pretty good. They were definitely better with the real sugar but without the sugar they are a pretty good protein snack.

Overnight Blueberry French Toast

Reviewed: Jan. 13, 2003
I made this the day after Christmas to rave reviews. The only regret I had was that I hadn't made two batches. Oh, I also adjusted for fat and calories by using egg whites and no-fat cream cheese. Didn't miss the calories at all.

Caramel Snack Mix

Reviewed: Jan. 13, 2003
This is so easy and very good. I was surprised by the previous reviews that thought it was too crunchy. I thought the crunch was perfect. I made this for Christmas and it was funny to watch peoples reaction when they expected traditional chex mix. After the initial surprise, everyone loved it.

Chili I

Reviewed: Nov. 21, 2002
I was very nervous making this chili with the odd ingredients, but with all the reviews, I just had to give it a try. It really did turn out well, but I wasn't as excited about it as many of the reviewers. However, my husband thought it was the best chili he has ever tasted. He said that usually chili is chili but this was just a little more unique and flavorful. I will make it again and next time try it on guests.

Black Bean and Salsa Soup

Reviewed: Nov. 12, 2002
Very delicious soup! I looked at previous reviews and saw complaints about it being too watery, so I drained the salsa before I put it in the food processor to get rid of extra moisture. Turned out great. My husband said the soup tasted like the inside of a burrito. I will make this again soon.

Grandma Johnson's Scones

Reviewed: Nov. 9, 2002
Delicious! I also added the nutmeg, cinamon and vanilla. I wasn't prepared for them to spread quite so much. My first attempt ended in one giant scone, because I put them too close together, so spread them out and plan for them to grow, grow, grow!

Italian Meatball Sandwich Casserole

Reviewed: Nov. 9, 2002
I looked at the other reviews and found many complaints about soggy bread. So, before I put the casserol together, I toasted the cubed bread in the oven, stirring every few minutes. I also put a little more bread in than the recipee called for to soak up some of the moisture. Oh, I also omitted the water.

Cream Cheese Frosting I

Reviewed: Feb. 8, 2003
First time I have made a creame cheese frosting that didn't have butter. It was not as sweet with a very strong cream cheese flavor to it. I really liked it!

Bacon and Tomato Cups

Reviewed: Sep. 6, 2002
I made these for a party and they were a hit. I tried to make a few early in the day so I would have it right for evening and when I was finally happy, I rolled a piece of dough into a very thin circle, pressed it into the mini muffin tin and then filled with the mixture. It was a very big hit.

Poppy Seed Chicken

Reviewed: Aug. 30, 2002
My husband LOVED this chicken. Both my 2 and 4 year old kids also ate it very well. It was easy. The only thing I did different, was omit the sherry because I didn't have any.

Awesome Honey Pecan Pork Chops

Reviewed: Aug. 16, 2002
A very quick and easy to change pork chops. To save time, I paid a little extra and bought the chops that were already thin cut...no pounding.

Peanut Butter Cup Cookies

Reviewed: Jul. 26, 2002
I made these for a family gathering and everyone went crazy for them. I made a double recipee and they still all got eaten. The recipee says it makes 40 cookies but mine came out to about 32 cookies per batch. It helps to buy a double size mini-muffin tin so you get them all done faster.

Easy Devonshire Cream

Reviewed: Nov. 9, 2002
Delicious! I doubled the sugar to make it a little sweeter, but it was perfect for scones or on top of strawberries.

Cousin Cosmo's Greek Chicken

Reviewed: Jan. 13, 2003
I made this tonight and we really enjoyed the flavor. It really tasted like something we might order at our favorite greek restaurant. I substituted the chicken broth like those before and I added a lot more tomato and spinach than suggested. The soup base that is left makes a great soup to be eaten on its own.

Red, White and Blue Slaw Salad

Reviewed: Sep. 6, 2002
Delicious!!!! I made one mistake...I didn't think 1/4 cup blue cheese was enough so I added a bit, but it was too strong. Still delicious and different.

Baja Bean Salad

Reviewed: Aug. 16, 2002
I loved the taste of this salad!!! However, after sitting in the fridge for a couple of days, it was very watery and I had to drain it. I am not sure if that is caused by the type of guacamole I used or maybe from the tomato and cucumber. Kathy

Poppy Seed Dressing I

Loved this dressing and used spenda in place of sugar. Makes for a lower calorie dressing than the others that have oil in them.

Aggression ( Oatmeal ) Cookies

fun for the kids, but the cookies werent my favorite. The recipee was also too big, so just making a bowl for each child is fine.
