Harvest Salad

My husband loves this salad. I leave out the avacado because they don't really go and they are hard to come by here. I gave it a 3 star because I find this to be sooooo sweet, too sweet. I eat it but I have to say I don't really like it but my as I said my husband loves it.

Rice with Black Beans

I made a few modification as well. But everyone in my house including my 4 and 2 year old loved this. I sauted the onion and garlic is a large skillet, then I used that skillet to cook brown rice in chicken broth with a dash of cumin. Once the rice was done I added the other ingredients. Oh and because it is tomato season I used fresh. It was soooo good.

French Dip Sandwiches

I followed the recipe and it was salty, I would use the modifications of low sodium soy sauce and half a bouilon next time around. I think I will make it again to give it another try but I was not a huge fan.

Greek Potato Stew

I really liked this a lot and would have rated it a 5 star except that my husband did not go crazy of it like I did. It was so simple and so tasty. You really need to make sure you use the right olives because that is where all of the flavor comes from.

Yumm! These are our favorite cookies. They are so much fun to make and they are sooo tasty. Not to mention they freeze awesome, you could not taste the differance at all.

Linzer Torte Cookies

I love these bars. I did not do the cut out cookies but made them in a pan and cut them into bars and they were so good. They froze well too. I can't wait to make them again.

Mrs. Ronzo's Lemon Balls

I am giving these 3 stars, they were okay and a good place to start. For me a lemon cookie needs more lemon. I will make these again but instead of lemon extract I will use lemon zest in the dough and lemon juice in the icing.

Chocolate Mint Cookies I

Yum! My husband has declared these his new all time favorite cookie! I added some mint extract to the dough and could not find Andes candies so just used some mint chocolate. I think they will be so much better with the andes as they are more minty.

Spinach and Rice (Spanakorizo)

Yumm! this was good. I used brown rice because that is all we eat so the cook time was longer. I put in about 1/4 cup of feta and I feel like it was too much. But you really need the feta and lemon. I also cooked it in chicken broth not water for more flavor. I am going to double it next time and eat it as a meal instead of a side.

this recipe was okay. I think if you don't like fish then this is for you however I love fish. The topping was good but it really masked the taste of the fish.
