Easiest Peanut Butter Fudge

Delicious - I have made it several times and always receive rave reviews. People can't believe how quick and easy it is. After the fudge cools, I microwave about 1 cup of Nestle Peanut Butter & Milk Chocolate chips and spread them over the top. I also reduced the brown sugar to 2 cups and the confectioner's sugar to 3 cups because it was too sweet. I increased the peanut butter to 1 cup.

Spicy Seafood Shell Appetizers

Wow, everyone loved this. It was so fast and easy in the pre-baked phyllo shells. I like spicy, so I added some ground red pepper and also Old Bay seasoning in addition to the hot sauce. I didn't have swiss cheese so I used white cheddar and it worked very well.

Seven Layer Dip II

Excellent, definite party pleaser. I also added a layer shredded lettuce before putting the cheese and tomatoes on top. The guacamole layer was especially good. I added 1/2 a pkg of cream cheese to it also.

Baked Fruit Dip

Prosciutto Cups

Using proscioutto as "cups" was fast, easy and flavorful but the filling was pretty bland. I'd try it again, mabye with chive-flavored cream cheese or by added parmesan cheese to the ricotta.

Lime Garlic Chicken

Very good, not to mention quick and easy. I didn't even bother flouring the chicken, I just cooked it in the butter, garlic and lime juice. I do recommend cutting the chicken into strips, though, so that all the chicken absorbs the flavors. I also put some of the sauce on top of steamed broccoli - excellent. My husband loved it.

The Best Meatballs

I make a lot of meatballs and wasn't impressed with this recipe...I never mixed different meats before and was excited to try it, but I couldn't taste the difference and it was much more expensive. I also prefer to bake them on a baking sheet instead of fry them in so much oil.

Spicy Peach-Glazed Pork Chops

Really good sauce. I didn't have peach preserves so I substituted low sugar apricot preserves and it came out great. I also just mixed the spices into the sauce instead of patting them onto the meat, less hassle.

Outstanding Chicken Dinner

The sauce was great but this recipe seems unnecessarily complicated - why do you cook the chicken twice?! I'll make it again, but I'll make the sauce first and then put it over the raw chicken, mushrooms, artichokes, etc. in the baking dish and bake it altogether.

Grilled Orange-and-Bourbon Salmon

Very good sauce, especially liked the bourbon flavor - it wasn't too strong at all. I didn't have chives so I substituted 1 tablespoon of fresh chopped ginger (the kind that comes in a jar) and I liked the resulting flavor from it.

Mexican Baked Fish

Nice change from regular fish dishes. I used orange roughy instead of cod and added green onions to the top of the casserole. Really liked the avocado flavor and texture with this dish.

Broccoli Beef I

The sauce has a good flavor. I did double it based on prior reviews. I also doubled the garlic and ginger. I added onion, bamboo shoots, red pepper flakes and about 1 tablespoon of sesame oil. I did make the mistake of using round steak instead of sirloin, though, because that's all I had. It was tough and flavorless, I'll definitely use sirloin next time!

Banana Pumpkin Bread

I really liked this bread but banana and pumpkin are both very strong flavors. Mixed together, they kind of cancelled each other out and I couldn't taste a lot of either. I would use either all bananas or all pumpkin in this recipe. I made it lighter by replacing the oil with the same amount of applesauce and using half real sugar and half Splenda sugar substitute. Also, I baked the bread for 60 mins and it wasn't done. I recommend at least 70 mins because mine fell and was heavier because it wasn't all the way done.

Baked Spinach

I really liked the flavor of this casserole. I did add about a teaspoon of nutmeg, though. I also found the layering directions confusing so I just mixed all the ingredients together and it came out fine. I also used frozen spinach rather than fresh to save time and money.

Garden Stuffed Baked Potatoes

Really good! Based on the previous reviews, I added garlic, half a cup of shredded colby jack cheese and used Hidden Valley Ranch dressing with Bacon to enhance the flavor. Also, to save time I didn't cook the onions, just mixed them with the rest of the filling ingredients before stuffing and baking the potates. This probably made the onion flavor stronger than the original recipe but if you like onion you'll really like the taste.

Gorgonzola and Apple Pork Chops

I love blue cheese but this recipe had too much, even for me. The flavor of the apples were lost in the strong blue cheese. I would have liked it better with about half the amount of blue cheese the recipe called for. I also recommend draining the pork chops briefly on a paper towel before stuffing them. To make this recipe even easier, I wonder how it would come out if you put raw apples and blue cheese in a pork tenderloin split down the center and baked.

Peach Cobbler II

Delicious! I received rave reviews. I've made it twice - once with just peaches and once with peaches and mixed fresh berries. Each time I increased the amount of fruit and decreased the amount of sugar I mixed with them. I then also decreased the water. Served it hot with ice cream!
