Sour Cream Chicken
This was SO delicious! I browned the chicken on the stove in a little oil first, and used cream of chicken with herbs (I bought the wrong stuff) and of course added salt and pepper. I cooked it in the oven for a really long time, because we had friends over and got distracted and it came out so tender and thick...had it with mashed potatoes and everyone loved it!! Can't wait to make it again!!!

Beef and Irish Stout Stew
I made this last week for St. Patrick's Day, and it was quite tasty! I didn't use the recipe (forgot to print it and my laptop had died) so I went from memory, using 2 14(ish) ounce cans of Guinness (which I happen to love) minus a few sips for myself LOL. I also added potatoes to the stew instead of mashing them, because I was being lazy. Because of all the potatoes, carrots and onions (along with the beef) it got very thick quickly, so I added a can of beef broth and misc seasonings (from a jar of mixed spices) and the taste was great...and my house smelled delicious! I served it with homemade biscuits and my one problem was that it had a bit of a 'bite' in the back of your throat, much like drinking an actual guinness. I don't know if this was because I didn't cook it long enough, added too much beer or what have you. I've also heard that the cans with the cartridges in them will do that, but that's the only way I could find Guinness. I'll make it again and play, because the flavor without that bite was delicious!

Spinach and Bacon Chicken
We loved this and couldn't get enough!! I tossed the whole thing with angel hair pasta and let it sit off of the burner for a few minutes before I served it and the sauce thickened quite nicely! I used a Riesling wine (which I had open already) which gave it a sweet flavor and due to a defrosting mixup only 2 chicken breasts instead of 4, cut into strips so there was plenty for the two of us. The chicken itself was delicious and got a nice little crispiness to it, so I left it out until the last possible minute so it wouldn't get too soggy. It really had a light taste considering the ingredients (especially since I didn't have enough bacon grease in the pan so I added butter to cook the chicken, eek!), and next time I may omit the bacon altogether. It was tasty, but wasn't necessary. I was told I need to make this all the time!!
