Cake Balls

Despite this recipe being time consuming and a bit messy, I really enjoyed these! I'm excited to try a tiramisu recipe I found. They are easy and fun! My SpEd students really enjoyed making these for a Christmas activity. Thinking of making them bigger and doing cake pops for the fundraisers we do. For those who don't get how to do it or who have had negative outcomes, something with the mix is not right. It's best to really crumble the (COOLED) cake so there are no big chunks and to use a little bit of frosting at first, and then add as needed. If a whole tub is used, the balls will not form properly. Happy Cake Balling ;)

Cathy's Banana Bread

This is really delicious! To add some protein and reduce fat/calories I used Fage 0% plain Greek yogurt instead of sour cream. I used real butter too and added more banana. It was perfect; super moist! I sprinkled some brown sugar on top which gave it a yummy crunch :) I used a loaf pan and baked it for the recommended 50 min. @ 350° but then increased the oven temp to 375° and baked another 15 min. b/c the middle was still runny. I will definitely be making this again! Thank you!

Coconut Shrimp I

Wonderful! I was so excited to try these! Easy to make (freezing/refrigerating them is essential!) and great to eat! I will definitely be making these again! We used "Malibu Sauce" as a dipping sauce: yellow mustard and mayo mixed together :)

Honey Walnut Shrimp

Oh. My. Goodness. I have made this several times now b/c it is amazing! I think it tastes better than the restaurant version! When I discovered how EASY this was to make I was dumbfounded! Even my boyfriend thought it was simple! I definitely make sure to take all the tails off the shrimp. The first time I made this it was so messy! I have learned since then! I make sure to use spoons to place the shrimp in the oil. I play around with the sauce until I like the taste. I sometimes omit the walnuts if I don't have them. And I use "Missy's Candied Walnuts" recipe for them when I do make them. An all around awesome recipe!

Judy's Strawberry Pretzel Salad

This was out of this world! I received many compliments...especially about the crust :) I did change a few things: 1) I used about 2 cups of pretzels since I was using a 10" spring form pan. 2) I added a few splashes of vanilla to the cream cheese mixture. 3) I let the jello/strawberry mix set for about 45 min. 4) I baked the crust for about 8 1/2 min. and it was perfect. 5) Made sure I "sealed" the crust using the cc mix. I didn't want to pretzels getting soggy. Things I learned: 1) Not to use a spring form pan again. Too messy! If I do, I will half the jello mixture. 9x13 glass baking dish would be ideal b/c the colors are so pretty! 2) I plan on trying lower fat/sugar versions of all the ingredients next time. Well, maybe not the cream cheese ;)
