Kentucky Butter Cake

Reviewed: May 29, 2012
Great cake overall, lousy directions. Make it the same way you would any other cake: mix all dry ingredients together and set aside. Cream butter and sugar together, add eggs and vanilla, mix thoroughly. Alternate adding dry ingredients with wet, starting and finishing with dry. I didn't wait til it cooled to cut into it as we had it with ice cream but if you want a perfectly presented cake, definitely wait before unmolding. Great taste and easy if you make it the traditional way.

Jamie's Minestrone

Reviewed: Jan. 7, 2012
Amazing soup! I halved the recipe and substituted chicken broth for the water, and diced tomatoes for half the tomato sauce. I kept the amount of garlic the same (3 cloves) Also added 1/2 tsp salt and grated pepper to lightly cover the top of the pot while cooking. I actually made it up to the point of putting all the veggies in and bringing it to a boil then turning it off for the afternoon. When I got home, Insimmered it for about 20 min with the kidney beans in and cooking the pasta on the side. It was perfect! My husband wanted another batch the next night and I couldn't agree more! A healthy and tasty way of getting all your veggies!

Chocolate Toffee Crunch Bars

Reviewed: Nov. 16, 2011
Holy toffee! Never have to buy this again! I only made half the recipe but kept the amount of toffee the same as the original recipe and used chopped almonds instead of walnuts. They look professional and taste great! I will be boxing these up for the holidays along with my other bars to give away :)

Lower Fat Banana Bread II

Reviewed: Aug. 19, 2011
Replaced apple sauce with 1/2 cup non fat Greek yogurt, put in 1/2 tsp of cinnamon and used 1 cup spelt flour and 3/4 cup all purpose. I also reduced the vanilla to 1 tsp and replaced nuts with chocolate chips for the kids. Everyone loved them!

Chocolate Chocolate Chip Cookies I

Reviewed: Jun. 20, 2011
Good. Not as fudgey as I like, but good. Don't over bake! 8 minutes is enough or you will get a drier cookie.

Double Tomato Bruschetta

Reviewed: Jun. 10, 2011
I made this to put onto chicken burgers with some goat cheese. Absolutely delicious! Even my 3 year old ate hers up! I will definitely make this as an appetizer in the future. It's the only bruschetta recipe you need - restaurant quality!

Streusel Topped Blueberry Muffins

Reviewed: May 29, 2011
Muffin LOVE! Added 1/4 cup brown sugar and doubled the lemon zest at the advice of another reviewer and they were eaten up within hours of making them (12 muffins - 5 people!). Delish! Never need another blueberry muffin recipe!

Loved this with simple scones on this site. I bumped up the sugar content to 2 TBSP for a bit more sweetness. The best!

Simple Scones

The absolute best! I made the almond cherry and doubled the almond extract. Everyone loved them and devoured them despite their "low carb" diets! I served these with the easy Devonshire cream, bumping up the sugar in that to 2 TBSP. The best!

Sam's Famous Carrot Cake

Reviewed: Apr. 10, 2011
Absolutely awesome! Nice textured cake. For a smoother texture, I would omit the walnuts. Otherwise, great taste and definitely my go to carrot cake recipe! Fabulous with the cream cheese icing 2 recipe with 3 cups sugar instead of only 2.

Clone of a Cinnabon

Reviewed: Mar. 19, 2011
Absolutely amazing! Made them the night before and covered them with plastic wrap and stuck them in the fridge overnight. I let them sit out for about 30 minutes before putting them in a pre-heated oven (350) for 25 minutes. A little too much icing for my liking though and I did bump up the cream cheese to about 5 or 6 oz for a more cream cheesy and less sugary taste. My husband ate 3 in a row! This one's a keeper!
