Breakfast Bars

I wanted to make some snacks to put in the freezer and tried this one. They are YUMMY! I somehow managed to forget to put the oats in, and used almonds instead as a personal preference. I tried one last night and it was tasty as a dessert, but it seems just substantial enough to eat in the morning on the run. I will make these again (next time with the oats)!

Turkey Noodle Casserole

I made this to freeze for meals for my boyfriend. He loves it! It re-heats very well! Instead of cooking it all together as it calls for, I just portioned it and froze it that way. I used greek yogurt instead of sour cream because that's what I had.

Crab Noodle Casserole

Overall good flavor. I wasn't a big fan of the zucchini and imitation crab flavors together. I added carrots instead of celery for a little extra color, otherwise followed the recipe. I was worried the zucchini would be mushy, but maybe I should have cooked them longer and it could have been better.

Mom's Zucchini Bread

So moist and tasty! I followed this recipe almost to the T. I did not have almond extract so that was the only difference. This took 55mins to cook, maybe could have used a few more minutes. Very hard to tell whether it is just very moist or maybe a tad doughy. Will be making again for sure!

Baby Bok Choy with Garlic

First time with cooking/eating bok choy. Not really a fan, but the recipe is good, I think I just don't care for bok choy. Love the amount of garlic! Can never have too much.

Yummy!! I used chicken broth instead of water and bullion because that's what I had. So very tasty, and the carrots add a great color to the plate! Thanks for the great idea!

The Best Apple Pie Ever

I made this pie in a gluten and dairy free pie crust. This was a really great spin on the traditional apple pie and had really good flavor, I just prefer the traditional apple pie more.

Artichoke, Feta and Quinoa Salad

Not sure how to rate this as I changed some major things. But it turned out amazing! I used artichoke hearts instead of asparagus and Quinoa instead of Couscous. This was a truly great dish that I made with the Mediterranean chicken dish from this site.

Fresh Beet Salad

So delicious!! Thanks for the new idea for cooking chard! I had chiogga and red beets so I used both with rainbow chard. I completely forgot to add the peas at the last minute, they may have been great in there but definitely not missing anything without them. Will be making again!

Mediterranean Chicken with Pepperoncini and Kalamatas

I do not like anything spicy at all, so I removed the stem and seeds from the pepperocini, because even those are more spicy than I would normally eat. I added about 1/2 cup chicken broth for fear of it being too dry. In the future I would not do this, it probably wasn't needed and made the cream at the end to brothy and not creamy. The chicken was delicious and just fell off the bone. Will be making again! Just trust that the chicken will turn out moist- doesn't need any more liquids!

Garlicky Quinoa and Garbanzo Bean Salad

Very good Quinoa dish if you like mustard flavors. I personally did not like the garbanzo beans in there, because of the mix in textures. Would make this again without garbanzo and maybe a little less mustard. I added sauteed onions, which was great!

No Bake Choco-Peanut-Oatmeal Cookies

I was hoping these would be like what I made as a child, but not so much. They formed really well, I let the mix boil 3 minutes and they set great. I just wasn't a fan of the texture and they are too sweet!! I did 1 1/2 cups sugar, and could have done with less.

Turkey and Quinoa Meatloaf

I must have done something wrong. This recipe looks amazing, as do the reviews, but I found it a little too bland. I didn't add hot sauce because I don't like anything remotely spicy. I used more tomato paste to make up for it. Also, it was very moist- like sitting in 1/2" of liquid in the bread pan I used. Not sure what I did wrong. I will try it again, maybe the quinoa needs to cool before going in? Maybe next time I will try half quinoa and half bread crumbs to absorb some moisture.

Served this at a potluck and it was a huge hit!! I only used about 2.5cups Quinoa because that's all I had, but kept the same amount of veggies and dressing. Will be making this one again!

Baked Scallops

The flavor was amazing. I followed another reviewer, and didn't let the scallops touch the edge of the dish while cooking. Other than that, I followed the recipe exactly. They cooked perfect but the bread topping was soggy on a majority of them. Not sure what I did wrong, will try the recipe again.

Quinoa Chard Pilaf

This was delicious and extremely flavorful! Granted, I had to make several changes just because I was working with I had on hand. No mushrooms, so sauteed broccoli and added it last minute instead. I used about 5-6cloves of garlic cause you can't have too much. Had dry lentils (1cup) so cooked those separate for 15mins in water and chicken bullion cause I didn't think they'd fit in my pot. I am very new to cooking and had no idea how quinoa cooks (expand quite a bit FYI to fellow new cookers). Also steamed chard separate for same reason. When there was about 5 mins left on the quinoa, I drained lentils and added them to quinoa to absorb some of the broth (I forgot to decrease chicken stock when I didn't add lentils at start). This was my first experience with quinoa and it will now be a staple in my cooking. So easy, healthy and very filling! Excellent high protein, high fiber, low fat meal! My boyfriend and I had just this as a meal and barely made a dent in the pot. Thank you for an excellent recipe idea!
