Pork Chop Dinner for Two

The pork turned out amazingly moist and tender, however it was lacking some flavor. Adding a little extra salt and pepper after cooking helped some. I would suggest adding a bit more salt and pepper than it calls for.

Extra Easy Pumpkin Cookies

These were a hit at a potluck, everyone wanted the recipe! I put a little bit of whipped cream cheese frosting on to give it a little color, I think it also helped the flavor. yes these are "cakey" but you're using a packaged cake mix, it should be kind of expected. Will be making again!

Rum Cake I

Amazing! It only took about 40 minutes to cook in a convection oven. I made double the glaze and slowly poured it on over 3 days. I used a butter knife, stuck it down in several spots and let the glaze pour slowly down the knife into the slit. Don't want to refrigerate it, then the glaze won't soak in as well.

No Bake Rum Balls

I used brandy and almonds in replace of rum and walnuts. I realized as I had already put everything together, I did not have corn syrup. I used maple syrup instead. I coated half in just powder sugar and half with chocolate (as another reviewer suggested). Originally, I thought they were too sweet, however after letting them set for two days, the flavors were amazing! Big hit at a party!

Vegan Chunky Chili

I first have to say, I wish I had the time to soak the beans overnight, but I didn't- I needed a chili recipe for that night. So I used canned beans and didn't soak the lentils (just cooked them for about 30 minutes). I threw everything together in a crock pot and left on low for about 4 hours. I didn't add water because there was no room in the pot! This turned out amazing! The flavors were perfect together and I actually prefer it to regular chili! Huge hit with my boyfriend as well! Made a double batch to freeze individual portions for later. Thanks for a great recipe! Oh, the one main modification I made was a large can of stewed tomatoes rather than fresh. If I have time next time I will try with fresh!

Lasagna Roll Ups

These are great! Pretty time consuming to make, but I put them in the freezer for quick meals later on. I let the noodles cool before rolling them- being cold and sticky is easier. I only got 12 rolls with the filling, but maybe I filled them more than I should. Will be making again!

Zucchini and Pork Soup

This was really good! I didn't have oyster sauce, otherwise followed the recipe and it turned out great! The pork was very moist and tender (I am not normally a big pork fan) and went perfectly with the rest of the ingredients. I loved the tomato flavoring in the background. All around great dish! I makes a really big pot so I froze some individual portions for later.

Breakfast Bars

I wanted to make some snacks to put in the freezer and tried this one. They are YUMMY! I somehow managed to forget to put the oats in, and used almonds instead as a personal preference. I tried one last night and it was tasty as a dessert, but it seems just substantial enough to eat in the morning on the run. I will make these again (next time with the oats)!

Turkey Noodle Casserole

I made this to freeze for meals for my boyfriend. He loves it! It re-heats very well! Instead of cooking it all together as it calls for, I just portioned it and froze it that way. I used greek yogurt instead of sour cream because that's what I had.

Crab Noodle Casserole

Overall good flavor. I wasn't a big fan of the zucchini and imitation crab flavors together. I added carrots instead of celery for a little extra color, otherwise followed the recipe. I was worried the zucchini would be mushy, but maybe I should have cooked them longer and it could have been better.

So moist and tasty! I followed this recipe almost to the T. I did not have almond extract so that was the only difference. This took 55mins to cook, maybe could have used a few more minutes. Very hard to tell whether it is just very moist or maybe a tad doughy. Will be making again for sure!

Baby Bok Choy with Garlic

First time with cooking/eating bok choy. Not really a fan, but the recipe is good, I think I just don't care for bok choy. Love the amount of garlic! Can never have too much.

The Best Apple Pie Ever

I made this pie in a gluten and dairy free pie crust. This was a really great spin on the traditional apple pie and had really good flavor, I just prefer the traditional apple pie more.

Artichoke, Feta and Quinoa Salad

Not sure how to rate this as I changed some major things. But it turned out amazing! I used artichoke hearts instead of asparagus and Quinoa instead of Couscous. This was a truly great dish that I made with the Mediterranean chicken dish from this site.

Fresh Beet Salad

So delicious!! Thanks for the new idea for cooking chard! I had chiogga and red beets so I used both with rainbow chard. I completely forgot to add the peas at the last minute, they may have been great in there but definitely not missing anything without them. Will be making again!

Mediterranean Chicken with Pepperoncini and Kalamatas

I do not like anything spicy at all, so I removed the stem and seeds from the pepperocini, because even those are more spicy than I would normally eat. I added about 1/2 cup chicken broth for fear of it being too dry. In the future I would not do this, it probably wasn't needed and made the cream at the end to brothy and not creamy. The chicken was delicious and just fell off the bone. Will be making again! Just trust that the chicken will turn out moist- doesn't need any more liquids!

Garlicky Quinoa and Garbanzo Bean Salad

Very good Quinoa dish if you like mustard flavors. I personally did not like the garbanzo beans in there, because of the mix in textures. Would make this again without garbanzo and maybe a little less mustard. I added sauteed onions, which was great!
