Healthier Golden Pork Chops

I seared my chops with salt, pepper and garlic powder first. With searing, the cooking time was much less- I don't know how long as I left in an cooking thermometer so I don't set a timer. Didn't use cornstarch, I thought the gravy was a good consistency for this meal. Tasty and quick meal! I served with brown rice.

Braised Balsamic Chicken

I love balsamic vinegar and was really excited about this recipe! I even went out and bought "top shelf" balsamic vinegar. Unfortunately we did not care for this recipe, it somehow tasted too sweet...not sure what I did wrong but I thought I followed the recipe exactly.

Garlic Pork Roast

Delicious!! Such a simple and easy recipe! The pork was so moist and tender! Only change I made was added carrots and an extra can of broth, my crockpot is deep and narrow so I needed more to cover the pork. Definitely worth trying!

Roasted Pork Tenderloin

Yummy!! SO tender and moist! This wasn't the recipe I had planned to use when I bought a tenderloin roast so didn't follow exactly- I had no apples or brown sugar and only about half a jar of sauerkraut. I sauteed a large yellow onion and combined that with the kraut. Also, to save on time I browned the pork with the spices, a 2 lb roast took just over an hour in the oven and was delicious! Will make this again for sure!

Spinach and Mushroom Frittata

This was very tastey! I used half ricotta and half cottage cheese and added some turkey bacon. I made a double batch to freeze one for later. Great recipe, thank you!

Quinoa and Black Beans

Very good! I added both cans of black beans and if you are wanting this as a meal, I would recommend doing the same. I sauteed the quinoa for a bit before adding the broth. I also added a can of diced tomatoes and fresh mushrooms to add more bulk as I wanted this to be a full meal in itself. Great combo and would be easy to tweak for individual taste.

Healthier Delicious Ham and Potato Soup

This was tasty! I glanced at the recipe thinking I had everything, but was very wrong. I had to butcher it because I was out of so much. I subbed a leek for celery, shallot for onion, chicken broth for bullion/water and cornstarch for flour. I had only about 1 Tbs butter and made that work too. For being so short on some key ingredients, it turned out great! It's also good to know I could make it with much less butter and it still tasted wonderful! Next time I will be sure to have flour, otherwise I kinda like the revisions I had to make. I had to use a little more than a cup of milk but that may be due to the cornstarch.

Slow Cooker Chili II

I did make this with turkey for personal preference, drained/washed all the beans and added can diced tomatoes and about half a can of beer. To help the flavors meld I cooked the meat till almost done then added all the seasonings and onions. I then mixed everything in the crockpot and put it in the fridge over night. It was on low for 9.5hrs because I came home late and it was delicious! Really, if you like a more spicy chili (because this is not- which is the way I love it!) either pick a different recipe or add some spices! This got rave reviews from a group of 5...I had hot sauce, sour cream, olives and cheese to add as people prefer.

Beef Pot Pie I

This was a huge hit with me and my husband! I followed a few others advice and added beef broth and corn starch. I omitted celery for personal preference. I used left over beef roast which I was worried would come out over cooked but it was perfect! The puff pastry was a great addition, I had never had a pot pie with this and I will be making it again! Thanks for a great recipe!

Leek and Fennel Soup

Taste is definitely worth 5 stars! The flavors of this soup go really well together! I was a little confused on the instructions for the onions- do you really just half them? I would prefer if the onions and fennel were more chopped up, otherwise really good! I didn't add celery or salt for personal preference and used chicken broth because I did not have bouillon. Next time I will try it with less broth so it will be thicker. Thank you for a great recipe! Oh and I sprinkled in some crumbled bacon after trying it without- yummy!

Pork Fried Quinoa

This was good for what it is. I love quinoa and I love fried rice, but I don't feel like the texture of quinoa fit this recipe. With the left overs I heated and added an egg and sesame oil to make it different and I liked it that way better. I made this with the Szechwan Shrimp from allrecipes.

Yummy!! I added fresh bell peppers and onions and doubled the sauce (everything but the vegetable oil) an it was amazing! I did put much less red pepper flakes just for personal preference. Will be making again! My husband couldn't believe I made the sauce from scratch!!

Black Bean Hummus

I always love a new spin on hummus! This was great! I used soaked/cooked raw beans rather than canned because that's what I have around. Instead of the reserved fluid I used about 1Tbs water and 1 Tbs olive oil. I didn't read the directions well and blended the olives into the hummus- really great! It was just a tad spicy for my taste, but I don't care for spice at all. Will be making again with less cayenne pepper.

Summer Grilled Cabbage

Amazing!! I had some cabbage that needed to be used and it was way too hot to cook inside, this was a great way to cook cabbage! Will be doing this again! I individually wrapped the pieces in foil on indirect heat and didn't turn them. So tasty!

Chickpea Curry

I wanted to make this a meal so I added fresh spinach, tomatoes and prawns. My husband loved it, but it was way too spicy for me!! The flavor was really delicious, I just couldn't eat it. I made rice to eat it with left overs and that helped some with the heat. I didn't notice any other comments about it being too hot, so maybe I did something differently and didn't notice. Will try again with tweaking to reduce the heat.

Zucchini Hummus

Very tasty! I followed the recipe other than adding more garlic and zucchini (I added 2). This is a really fun twist on the normal hummus! The pinto beans really made this unique, I definitely recommend trying it with the pinto beans the first time! Also, with any hummus, it is so much better the next day! If you can make it a day ahead of time, it is well worth the wait!!

Quinoa Tuna Casserole

This was good for being a healthy version of tuna casserole. I added spinach and another can of tuna as I wanted it to be a stand alone meal. I think of tuna casserole as full of tuna and I feel like this could have even had a 3rd can, but that's probably a personal preference. (I also think somewhere along the way my portions were bigger as it didn't all fit in my casserole pan) Thanks for a great idea!
