Best Spanish Rice

Followed recipe, other than adding about 1/2cp onion. It looked and smelled delicious, but it turned out a little bland. I use a salsa that I know and love, that is chunky and full of flavor. I might try this again in the future, but it will need more seasoning for sure. Sauteing the rice really did make it more Spanish style than sticky rice.

Healthier Marinated Grilled Shrimp

Perfect!! So moist and full of flavor! I did not have tomato sauce so just left it out, but otherwise followed the recipe. This was a huge hit in our house and I will be making again!

Grilled Tarragon Mustard Chicken

I used chicken tenders and marinated them over night. I used fresh tarragon and the chicken was very moist and full of flavor, however, I wasn't a big fan of the flavor. I did not enjoy mustard and tarragon together, even though I love both! My husband did love these, so I'm guessing it's more personal preference than flaw in the recipe. I don't think I would make them again, but I do think this recipe is worth a try!

Barbequed Cabbage

I somehow managed to forget about the butter, but this still turned out amazing! I could see how the butter would add a little something extra, but the soy sauce added a delicious crisp to the grilled side of the cabbage. Will be making again!

Turkey Veggie Meatloaf Cups

This was very good. I followed the directions other than making it into a bread pan meatloaf. I also minced up my veggies rather than using a food processor- I liked the crunch it provided. Overall, it was a little dry and flaky. The flavor was great but it may need another egg or some type of fluid to help hold it together a little more. Will make again.

Curried Honey Mustard Chicken

I made a few changes to work with what I had- I used coconut oil instead of butter (a little less than 1/4 cup), I had bone in, skin on thighs that I removed the skin and used with bone in. I let it sit in the fridge overnight and put in the crockpot at 130pm. I set it at high for 1 hour and then low for about 3.5 hours and it was perfect! Wonderful flavor and the meat fell off the bones. I served over brown basmati rice with some of the juices from the crockpot. definitely worth a try! I wouldn't have thought to put these flavors together, thanks for a great recipe!

Garlic Prime Rib

This was my first experience cooking a prime rib roast. I have an internal thermometer in my oven and learned in never gets above 430 degrees, so I preheated my oven and put in in for 30 mins rather than 20 before decreasing the temperature. I also left a digital thermometer in the roast so I would be sure not to over cook it. This was absolutely delicious, a huge hit and so easy to do!! I would recommend this recipe, especially to newbies and less experienced cooks like myself. This is how I will always cook my roast- it was so tender, moist and perfectly med-rare.

Hearty Lentil Soup

This was delicious! I followed others and used olive oil and chicken broth. I decided at the last minute I wanted to make this soup even "heartier" and added mushrooms, zucchini and ham that needed to be used up. I believe the base recipe would be awesome on it's own, so much so I've already put this on my menu plan for next week!! I plan to make a very large batch and freeze into portions for later. Oh, I didn't have swiss cheese so I used a little parmesan instead- could be good without that too. :)

Healthier Buffalo Chicken Dip

This is always a huge hit!! This is a go to for potlucks! I have had the not healthy version and I think this healthier one is just as tasty!! One change I have made for personal preference is instead of ranch dressing, I use 1 cp low fat greek yogurt, 1/2 cup skim milk and a packet of dry ranch mix. I also microwave or bake it, I've never done this in the slow cooker.

Lighter Grilled Salmon

This will be added to my rotation of ways to cook salmon! I used a little less than 1/4 cup brown sugar and about 4tsp olive oil and 2 large cloves of garlic. This was so delicious but I think I could have even less brown sugar! I was surprised the flavors didn't overpower the salmon! Definitely worth trying!!

Quick Edamame Salad

This was tasty! I used fresh basil and parsley instead of dried. Next time I think I will try adding fresh garlic and maybe a few more herbs. The flavor is lacking a bit but at the same time it is a very addictive taste and you just want to keep eating it. Good, if not better the next day.

Healthier Golden Pork Chops

I seared my chops with salt, pepper and garlic powder first. With searing, the cooking time was much less- I don't know how long as I left in an cooking thermometer so I don't set a timer. Didn't use cornstarch, I thought the gravy was a good consistency for this meal. Tasty and quick meal! *Edit* I've now cooked this a few times, and I actually think I like it better on the stove, I sauté the onions and mushrooms put them off to the side, then brown the seasoned pork chops, once they are almost done I add cream of mushroom and the sautéed veggies, turns out great! I've also tried it with Campbell's golden mushroom and it adds a great taste too!

Braised Balsamic Chicken

I love balsamic vinegar and was really excited about this recipe! I even went out and bought "top shelf" balsamic vinegar. Unfortunately we did not care for this recipe, it somehow tasted too sweet...not sure what I did wrong but I thought I followed the recipe exactly.

Garlic Pork Roast

Delicious!! Such a simple and easy recipe! The pork was so moist and tender! Only change I made was added carrots and an extra can of broth, my crockpot is deep and narrow so I needed more to cover the pork. Definitely worth trying!

Roasted Pork Tenderloin

Yummy!! SO tender and moist! This wasn't the recipe I had planned to use when I bought a tenderloin roast so didn't follow exactly- I had no apples or brown sugar and only about half a jar of sauerkraut. I sauteed a large yellow onion and combined that with the kraut. Also, to save on time I browned the pork with the spices, a 2 lb roast took just over an hour in the oven and was delicious! Will make this again for sure!

Spinach and Mushroom Frittata
