I am currently in my last quarter of nursing school as well as recently married.  It is a goal of mine to have a well rounded meal on the table for my husband when he gets home from work.  Working 12 hours days and going to school can make that a challenge!  I decided to make a variety of meals and freeze them in individual portions so he can still have a quick and easy meal even if I'm not home.  I chose several recipes from allrecipes that I have made in the past, as well as a few new ones I found on pinterest- my second favorite website :) 

A few of the meals I chose to pre-make and freeze included:
Turkey Casserole
Classic Meatloaf made in muffin tins
chicken and rice soup
breakfast burritos
salsa chicken
blanched green beans

I love my vacuum sealer!  It makes freezing individual portions so easy!!  It also helps to not eat too much as you only thaw what you're going to eat!

I also made 3 frozen meals that are ready to be thrown in the slow cooker at a moments notice.  I made a beef stew with all the ingredients separated into one of 3 ziplock bags and all I have to do is put it in the fridge overnight and throw it in the slow cooker in the morning.

Because cooking is a pretty new concept for me, I thought it would be fun to start a blog on my attempts and successes of cooking.  I had no interest in taking the time or learning how to cook before I met my husband, but the adoration and praises I get from him (and others now too) has given me a whole new appreciation for cooking!

congratulations on your impending graduation. I went back to school for my RN when I was 43 an dit was the best decision I ever made. I worked part time as a nurse's aide while in school. I am single. All that said, I cannot believe that you are doing all this, plus working and still managing all this great cooking. And on top of all that, now you are blogging. Good on you nursing sister. You will h ave no trouble juggling your patient load and setting priorities.
