Layered Chicken and Black Bean Enchilada Casserole

It was a hit! Everyone loved it. Very moist and flavorful and baked nicely. Good presentation and great leftovers! The nice thing about this recipe is that you can add and change so many things about it to really make it exactly what you want. The amounts do not need to be exact, which is another plus for me. Just layered it until it looked right and popped it in the oven for 30 minutes. It sat for about 10 minutes and then we chowed down! I did make a few tweaks, though: Boiled and shredded the chicken breast (I prefer it this way for a Mexican dish - very tender and quick to cook) *Here's a tip: use your stand mixer to shred the chicken. It turns an arduous, dual fork process into a one-step wonder!) Used a packet of pre-made taco seasoning. I love this flavor and cannot seem to create it myself. Added an entire onion, finely chopped and pre-cooked. Used green enchilada sauce instead of red just per preference. Overall great recipe and such a crowd pleaser! Did our own chips and guacamole and some refried beans on the side, a quick side salad and you have a well-rounded meal. Well, don't forget the peanut butter brownies for dessert. ;)

Graham Griddle Cakes

Great recipe! Easy to make and tasty. I crumbled my own graham crackers though, added peanut butter and omitted pecans. They cooked nicely on the griddle. Denser/thinner texture. I could've added more flour to make them fluffier but we liked them like this actually. Would like to add something else for extra flavor tho.

Gingerbread Waffles

Taste is excellent. I didn't have mustard so left it out. It was not the easiest recipe in the world which is why it's getting 3 instead of 4 stars. It also used a lot of bowls and utensils which is not as fun for a morning endeavor. Also the ginger outweighed the buttermilk flavor which made it a little pointless.

Chocolate Mint Cookies I

These were a hit! Not overly sweet, and just the right touch of mint. Everyone came back for more. I will use this recipe again and again! :) I liked using the andes mint bits that come pre-cut.

Flourless Peanut Butter Cookies

Cookies were perfect only when they were hot out of the oven. After that they were just too dense and crunchy. They had a lot of pb flavor which is good, but the flour probably adds the necessary lightness to make them chewy. I will not use this recipe again.
