Giblet Gravy II

This gravy had a fantastic taste, but I'd leave out the giblets. I've never made giblet gravy so I wasn't sure how to "prepare" the giblets. I read on another site to boil them for an hour. I did that and put them into the gravy. I'm not sure they added any flavor, but it added some "chewy" stuff to it. Maybe my giblets were overcooked...not sure... With that being said, everything besides the giblets was great. I'll probably make again, but will just leave out the giblets.

Authentic Enchiladas Verdes

This is one of our favorite recipes on Allrecipes. My wife loves this and asks for it frequently. The sauce is what makes this dish and the leftover sauce gets put on EVERYTHING. It is absolutely fantastic on scrambled eggs or in breakfast buritto.

We really enjoyed this recipe. The chicken reminded us of a mole sauce. The lime butter sauce drizzled on the top made the dish!

The taste of the catfish was great! I thought it was very flavorful. We followed the recipe to a T and marinated the fish for about 24 hours in the fridge. Will definitely make again.

Chicken Chimichangas

These were good, but the proportions on the ingredients were WAYYYY off for us. We only used a quarter of the refried beans, half of the cheese, and a quarter of the rice. We also had TOO much sauce. We enjoyed this dish a lot but would really like to see someone else make it to see where we went wrong.
